Physico-chemical, toxicological and nutritional characterization of dry and in natura Moringa oleifera Lam leaves

Resumo: | The aim of this study was to elaborate dry and fresh extracts from M. oleifera leaves, as well as to perform the physicochemical and toxicological characterizations. Initially, the extracts were made by drying and homogenizing techniques of the leaves of M. oleifera, in dry or fresh state. Soon after, the samples were characterized according to the following parameters: water content (Moisture), water activity, ash, lipids, total soluble solids content, total titratable acidity, pH, and vitamin C. The toxicology test was performed. by Artemia salina Leach, which aims to evaluate the toxic effects on biological systems and to predict the possibility of substance toxicity in relation to other systems. The results of the physicochemical analyzes found for the fresh and dry leaves of M. oleifera were, respectively: Water content (Humidity) of 73.38 and 5.49 g / 100 g, AW was 0.89 and 0 , 43 g / 100g, ashes of 2.53 and 8.14 g / 100 g, lipids of 1.27% and 6.87%, the SST was 3.03 and 4.9º Brix, ATT 0.55 and 1.95 g / 100 g, pH 5.7 and 5.68 and vitamin C 1036.323 and 365.26 mg / 100 g. For toxicity against Artemia sp. observed an LD50 of 12,734 mg / kg for M. oleifera in natura leaves and 5,925 mg / kg for dry leaves, where both are considered nontoxic. Given this, it is concluded that the fresh and dried leaves of M. oleifera are an interesting, viable and inexpensive alternative for human food and supplementation, and can be applied in several segments, since they presented physicochemical and toxicological parameters. satisfactory, given the values determined by current legislation, as well as results similar to several studies in the area. |

Inicialmente, los extractos se realizaron mediante técnicas de secado y homogeneización de las hojas de M. oleifera, en estado seco o fresco. Poco después, las muestras se caracterizaron de acuerdo con los siguientes parámetros: contenido de agua (humedad), actividad del agua, cenizas, lípidos, contenido total de sólidos solubles, acidez titulable total, pH y vitamina C. Se realizó la prueba de toxicología. por Artemia salina Leach, cuyo objetivo es evaluar los efectos tóxicos en los sistemas biológicos y predecir la posibilidad de toxicidad de sustancias en relación con otros sistemas. Los resultados de los análisis fisicoquímicos encontrados para las hojas frescas y secas de M. oleifera fueron, respectivamente: Contenido de agua (humedad) de 73.38 y 5.49 g / 100 g, AW fue de 0.89 y 0 , 43 g / 100 g, cenizas de 2.53 y 8.14 g / 100 g, lípidos de 1.27% y 6.87%, el SST fue de 3.03 y 4.9º Brix, ATT 0.55 y 1.95 g / 100 g, pH 5.7 y 5.68 y vitamina C 1036.323 y 365.26 mg / 100 g. Por toxicidad contra Artemia sp. se observó una DL50 de 12.734 mg / kg para M. oleifera en hojas naturales y 5.925 mg / kg para hojas secas, donde ambas se consideran no tóxicas. Dado esto, se concluye que las hojas frescas y secas de M. oleifera son una alternativa interesante, viable y económica para la alimentación humana y la suplementación, y se pueden aplicar en varios segmentos, ya que presentan parámetros fisicoquímicos y toxicológicos. satisfactorio, dados los valores determinados por la legislación vigente, así como resultados similares a varios estudios en el área.O presente estudo teve como objetivo elaborar extratos, seco e in natura, provenientes das folhas da M. oleífera, bem como realizar as caracterizações físico-químicas e toxicológicas. Inicialmente, os extratos foram confeccionados a partir das técnicas de secagem e homogeneização das folhas da M. oleifera, estando estas nos estados seco ou in natura. Logo em seguida, as amostras foram caracterizadas quanto aos seguintes parâmetros: teor de água (Umidade), atividade de água, cinzas, lipídios, teor de sólidos solúveis totais, acidez titulável total, pH, e vitamina C. Foi realizado o teste de toxicologia por Artemia salina Leach, que têm como objetivo avaliar os efeitos tóxicos em sistemas biológicos e prever a possibilidade da toxicidade de substâncias frente a outros sistemas. Os resultados das análises físico-químicos encontrados para as folhas in natura e seca da M. oleifera foram, respectivamente: Teor de água (Umidade) de 73,38 e 5,49 g/100 g, AW foi de 0,89 e 0,43 g/100g, cinzas de 2,53 e 8,14 g/100 g, lipídios de 1,27% e 6,87%, o SST foi de 3,03 e 4,9º Brix, ATT de 0,55 e 1,95 g/100 g, pH de 5,7 e 5,68 e vitamina C de 1036,323 e 365,26mg/100 g. Para a toxicidade frente Artemia sp. observou uma DL50 de 12,734 mg/kg para as folhas da M. oleifera in natura e 5,925 mg/kg para as folhas secas, onde ambas são consideradas atóxicas.
