Resumo: We evaluated the effect of the proportions of young and old honeys in the constitution of "blends" used in industrial processing on the quality of honey during storage under conditions of Teresina, PI. We used six samples from new honeys and six old honeys collected in the deposit material from warehouse matter. The experiment was conducted in a completely randomized design in a factorial design with six treatments (proportions) and two times (two months) with six replicates (samples). Were considered as treatments the proportions of young and old honey mixtures, considering the HMF as standard for the preparation of proportion, where: T1 - old honey + new honey (4: 1); T2 - old honey + new honey (3: 1); T3 - old honey + new honey (2: 1); T4 - old honey + new honey (1: 1); T5 - new honey (0: 1); T6 - old honey (1: 0); The largest proportions in the mixtures old honey reduce the quality and shelf life of the honey, whereas HMF as an indicator.

Se utilizaron seis muestras de mieles nuevas y seis de mieles viejas recolectadas en el depósito de materia prima del almacén. El experimento se estableció en un diseño factorial completamente al azar con seis tratamientos (proporciones) y dos veces (dos meses) con seis repeticiones (muestras). Los tratamientos considerados fueron las proporciones de las mezclas de miel nueva y vieja, considerando el HMF como estándar para la elaboración de las proporciones, donde: T1 - miel vieja + miel nueva (4: 1); T2 - miel vieja + miel nueva (3: 1); T3 - miel vieja + miel nueva (2: 1); T4 - miel vieja + miel nueva (1: 1); T5 - miel joven (0: 1); T6 - miel vieja (1: 0); Mayores proporciones de miel vieja en mezclas reducen la calidad y la vida útil de las mieles, considerando el HMF como un indicador.Avaliou-se o efeito das proporções dos méis novos e velhos na constituição de “blends” utilizadas no processamento industrial sobre a qualidade do mel durante o armazenamento. Foram utilizadas seis amostras provenientes de méis novos e seis de méis de safras anteriores coletadas no depósito de matéria prima do entreposto. O experimento foi montado em um delineamento inteiramente casualizado em esquema fatorial com seis tratamentos (proporções) e dois tempos (dois meses) com seis repetições (amostras). Foram consideradas como tratamentos as proporções das misturas de mel de safra nova e mel, considerando-se o hidroximetilfurfural (HMF) como padrão para elaboração das proporções, em que: T1 – mel antigo + mel novo (4:1); T2 – mel antigo + mel novo (3:1); T3 – mel antigo + mel novo (2:1); T4 – mel antigo + mel novo (1:1); T5 – mel novo (0:1); T6 – mel antigo (1:0).
