Resumo: | The objective was to carry out an analysis of the handling of milking carried out in rural properties that use milk for subsistence, seeking to highlight risk factors and thereby contribute to improving this practice and the quality of milk consumed in rural properties located in the municipality of Uruguaiana, Rio Grande do Sul. To conduct the study, 10 farms were selected where beef cattle and sheep are raised in the extensive system and which have dairy or crossbred cows intended for milking to obtain milk for human consumption. the resort. After the selection, a semi-structured guide questionnaire was given to each owner to obtain information regarding handling during milking and the milk obtained. At the end of the interview, each response from each property was considered a variable. The data obtained were tabulated in Excel, studied descriptively as to the occurrence percentages and analyzed with the help of IBM SPSS Statistics 20.0 software. From the analysis it was found that manual milking is performed in most of the properties and in a location not appropriate for this purpose. Regarding the care with milk hygiene and the health of the cows, it was found that they are below the desired in all properties. Thus, from this knowledge it is possible to carry out actions aimed at improving the quality of milk, aiming to preserve the health of the people who consume this product, as well as its by-products. |

Para realizar el estudio se seleccionaron 10 fincas donde se crían ganado vacuno y ovino en el sistema extensivo y que cuentan con vacas lecheras o cruzadas destinadas al ordeño para obtener leche para consumo la gente del balneario. Después de la selección, se entregó un cuestionario guía semiestructurado a cada propietario para obtener información sobre el manejo durante el ordeño y la leche obtenida. Al final de la entrevista, cada respuesta de cada propiedad se consideró una variable. Los datos obtenidos fueron tabulados en Excel, estudiados descriptivamente en cuanto a los porcentajes de ocurrencia y analizados con la ayuda del software IBM SPSS Statistics 20.0. Del análisis se encontró que el ordeño manual se realiza en la mayoría de las propiedades y en un lugar no apropiado para este propósito. En cuanto al cuidado con la higiene de la leche y la salud de las vacas, se encontró que están por debajo de lo deseado en todas las propiedades. Así, a partir de este conocimiento es posible realizar acciones encaminadas a mejorar la calidad de la leche, con el objetivo de preservar la salud de las personas que consumen este producto, así como sus subproductos.O objetivo desse estudo foi realizar uma análise do manejo da ordenha realizada em propriedades rurais que utilizem o leite para subsistência, buscando evidenciar fatores de risco e, com isso, contribuir para a melhoria dessa prática e da qualidade do leite consumido em propriedades rurais localizadas no município de Uruguaiana, Rio Grande do Sul. Para a condução do estudo, foram selecionadas 10 fazendas em que são criados bovinos de corte e ovinos no sistema extensivo e que tenham vacas de raças leiteiras ou mestiças destinadas a ordenha para obtenção do leite para o consumo das pessoas da estância. Após a seleção foi entregue a cada proprietário, um questionário guia semiestruturado para serem obtidas informações referentes ao manejo durante a ordenha e ao leite obtido. Ao final da entrevista, cada resposta de cada propriedade foi considerada uma variável. Os dados obtidos foram tabulados em Excel, estudados descritivamente quanto aos percentuais de ocorrência e analisados com o auxílio do IBM SPSS Statistics 20.0 software. A partir das análises constatou-se que a ordenha manual é realizada na maior parte das propriedades e em local não apropriado para esta finalidade. Em relação aos cuidados com a higiene do leite e da sanidade das vacas verificou-se que estão aquém do desejado em todas as propriedades. Dessa forma, a partir desse conhecimento se torna possível a realização de ações objetivando melhorar a qualidade do leite, visando preservar a saúde das pessoas que consomem este produto, bem como seus subprodutos.
