Resumo: The objective was to characterize a physical-chemical quality in soybeans. Storage units stored in municipalities in the Midwest region of Brazil. The soybeans were collected in eight grain storage units distributed in different municipalities in the Midwest region. It carried out a characterization of grains by means of moisture content, electrical conductivity, color, bulk density, mass of a thousand grains, pH, close composition and the acidity, peroxide and iodine indices of the oil. A physical characterization is shown with 127.15 µS cm-1 g-1 for electrical conductivity, 7.50 for pH, 55.74 for L *, 10.41 a * and 31.46 for b *, 33, 15 for chroma and 71.70 for h*, 163.91 g of corn mass and 701.00 kg m-3 of apparent specific mass. The proximal composition gave average values of 11.30% for moisture content, 32.11% for protein, 7.76% for fiber, 4.68% for ash, 20.62% for carbohydrates and 23.62% for the moisture content. oil. A characterization of the oil quality indexes shown with values of 0.08 mg KOH of oil-1 for acidity, 1.18 meq of O2 kg of oil-1 for peroxide, 30.72 g of I2 100 g of oil-1 for iodine. It concluded that the soybean grains of the municipalities of the Midwest region, regarding the physical and chemical quality of the grains, is within the quality standard according to the legislation and researched literature and the quality of the oil with the exception of iodine with values below the standard, is in the range that guarantees its quality.

Las semillas de soya fueron recolectadas en ocho unidades de almacenamiento de granos distribuidas en diferentes municipios de la Región del Medio Oeste de Brasil. La caracterización de los granos se realizó mediante contenido de agua, conductividad eléctrica, color, masa específica aparente, masa de mil granos, pH, composición proximal y los índices de acidez, peróxido y yodo del aceite. La caracterización física se presentó con promedios de 127.15 µS cm-1 g-1 para conductividad eléctrica, 7.50 para pH, 55.74 para L *, 10.41 a * y 31.46 para b *, 33, 15 para croma y 71.70 para h *, 163.91 g de masa de mil granos y 701.00 kg de masa específica aparente m-3. La composición proximal ocurrió con valores promedio de 11.30% para el contenido de agua, 32.11% de proteína, 7.76% de fibra, 4.68% de gris, 20.62% de carbohidratos y 23.62% para aceite La caracterización de los índices de calidad del aceite mostró valores de 0.08 mg KOH g aceite-1 para acidez, 1.18 meq O2 kg aceite-1 para peróxido, 30.72 g I2 100 g aceite-1 para yodo. Se concluye que los granos de soya de los municipios de la región del Medio Oeste con respecto a la calidad físico-química de los granos están dentro del estándar de calidad de acuerdo con la legislación y la literatura investigada y la calidad del aceite, con la excepción del yodo con valores por debajo del estándar, está en la gama que garantiza su calidad.Objetivou-se caracterizar a qualidade físico-química em grãos de soja provenientes de unidades armazenadoras em municípios da região Centro-Oeste. Os grãos de soja foram coletados em oito unidades armazenadoras de grãos distribuídas em diferentes municípios da Região Centro-Oeste do Brasil. A composição proximal se deu com valores médios de, 11,30% para teor de água, 32,11% proteína, 7,76% fibra, 4,68% cinza, 20,62% carboidratos e 23,62% para teor de óleo. A caracterização dos índices de qualidade do óleo mostrou-se com valores de 0,08 mg KOH g óleo-1 para acidez, 1,18 meq O2 kg óleo-1 para peróxido, 30,72 g I2 100 g óleo-1 para iodo.
