Evaluation of hygienic-sanitary conditions of food commercialized at the Central Market in São Luís – MA

Resumo: Objective: to carry out an evaluation of the hygienic-sanitary conditions of food sold in the Central Market in São Luís - MA. Methodology: For the hygienic-sanitary evaluation from the legal point of view of the Central Market, the checklist set out as Annex I in RDC No. 216 of September 15, 2004 from Anvisa / Ministry of Health, which deals with the Technical Regulation of Good Practices for Food Services. The form was filled out according to the apparent analysis of the place, judging the items arranged in it in positive or negative for different subjects such as structure and hygienic habits of the sellers. Results: In the Central Market, it was found that, regarding the physical structure of the site, of the 08 criteria analyzed, 05 were negative, showing the precariousness of the premises' facilities. In the assessment of the hygiene and clothing habits of the handlers, of the 09 items analyzed, only 01 was attended to, while 08 were negative, although 02 of these were marked as positive. Regarding the aspects and quality of the food, of the 12 items analyzed, only 04 were in accordance with the standards, while 08 criteria obtained negative results. Conclusion: This study demonstrated the poor hygiene in the commercialization of food in the Central Market in São Luís - MA, from the premises of the place, quality and aspect of the food, to the hygienic habits and clothing of the handlers.

Metodología: Para la evaluación higiénico-sanitaria desde el punto de vista legal del Mercado Central, la lista de verificación establecida como Anexo I en RDC No. 216 del 15 de septiembre de 2004 de Anvisa / Ministerio de Salud, que se ocupa del Reglamento Técnico de Buenas prácticas para los servicios de alimentación. El formulario se completó de acuerdo con el análisis aparente del lugar, juzgando los elementos dispuestos en él de manera positiva o negativa para diferentes temas, como la estructura y los hábitos higiénicos de los vendedores. Resultados: En el Mercado Central, se encontró que, con respecto a la estructura física del sitio, de los 08 criterios analizados, 05 fueron negativos, mostrando la precariedad de las instalaciones del local. En la evaluación de los hábitos de higiene y vestimenta de los manipuladores, de los 09 artículos analizados, solo se atendió a 01, mientras que 08 fueron negativos, aunque 02 de ellos fueron marcados como positivos. En cuanto a los aspectos y la calidad de los alimentos, de los 12 ítems analizados, solo 04 cumplieron con los estándares, mientras que 08 criterios obtuvieron resultados negativos. Conclusión: Este estudio demostró la falta de higiene en la comercialización de alimentos en el Mercado Central de São Luís - MA, desde las premisas del lugar, la calidad y el aspecto de los alimentos, hasta los hábitos higiénicos y la vestimenta de los manipuladores.Objetivo: realizar uma avaliação das condições higiênico-sanitárias de alimentos comercializados no Mercado Central em São Luís – MA. Metodologia: Para a avaliação higiênico-sanitária do ponto de vista legal do Mercado Central, escolheu-se a lista de verificação disposta como anexo I na RDC Nº 216 de 15 de setembro de 2004 da Anvisa/ Ministério da Saúde que trata do Regulamento Técnico de Boas Práticas para Serviços de Alimentação. A ficha foi preenchida de acordo com a análise aparente do local, julgando os itens dispostos na mesma em positivo ou negativo para diferentes assuntos como estrutura e hábitos higiênicos dos vendedores. Resultados: No Mercado Central, foi constatado que, quanto à estrutura física do local, dos 08 critérios analisados, 05 foram negativos, mostrando a tamanha precariedade das instalações do local. Na avaliação quanto aos hábitos higiênicos e vestuário dos manipuladores, dos 09 itens analisados, apenas 01 foi atendido, enquanto 08 foram negativos, apesar de 02 desses estarem assinalados como positivos. Em relação aos aspectos e qualidade dos alimentos, dos 12 itens analisados, somente 04 estavam de acordo com os padrões, enquanto 08 critérios obtiveram resultados negativos.
