Resumo: The eggplant (Solanum Gilo Raddi) has several benefits for human health and the study of its physical-chemical and biometric characterizations can help to improve its storage and commercialization conditions. Therefore, the objective was to study the physical-chemical characterization and the biometric characterization of the in natura jiló fruit acquired in the months of February, April and June 2021, in order to compare the results obtained. For the physicochemical characterization, the water content, pH, total soluble solids, fixed mineral residue and crude protein were evaluated. In the biometric characterization, the length, width, thickness and mass of the fruits were evaluated and, then, the means were compared using the Tukey test (p ≤ 0.05). The results showed the influence of the high water content present in the fruit in the other physicochemical analyzes and that the samples used in the different months of the year showed an elongated shape. It is possible to verify the importance of evaluating these characterizations, since they are of paramount importance for distribution centers and for the purchase of fruits by the final consumer.

Por tanto, el objetivo fue estudiar la caracterización físico-química y la caracterización biométrica del fruto in natura jiló adquirido en los meses de febrero, abril y junio de 2021, con el fin de comparar los resultados obtenidos. Para la caracterización fisicoquímica se evaluó el contenido de agua, pH, sólidos solubles totales, residuo mineral fijado y proteína cruda. En la caracterización biométrica se evaluó el largo, ancho, grosor y masa de los frutos y luego se compararon las medias mediante la prueba de Tukey (p ≤ 0.05). Los resultados mostraron la influencia del alto contenido de agua presente en el fruto en los demás análisis fisicoquímicos y que las muestras utilizadas en los diferentes meses del año presentaban una forma alargada. Es posible comprobar la importancia de evaluar estas caracterizaciones, ya que son de suma importancia para los centros de distribución y para la compra de frutas por parte del consumidor final.O jiló (Solanum Gilo Raddi) apresenta diversos benefícios para a saúde humana e o estudo das suas caracterizações físico-química e biométrica podem auxiliar na melhoria das suas condições de armazenamento e comercialização. Portanto, objetivou-se estudar a caracterização físico-química e a caracterização biométrica do fruto jiló in natura adquirido nos meses de fevereiro, abril e junho de 2021, afim de comparar os resultados obtidos. Para a caracterização físico-química foram avaliados o teor de água, pH, sólidos solúveis totais, resíduo mineral fixo e proteína bruta. Já na caracterização biométrica, foram avaliados o comprimento, largura, espessura e massa dos frutos e, em seguida, as médias foram comparadas pelo teste de Tukey (p ≤ 0,05). Os resultados mostraram a influência do elevado teor de água presente no fruto nas demais análises físico-químicas e que as amostras utilizadas nos diferentes meses do ano apresentaram formato alongado.
