Microbiological quality evaluation of Brazil nut (Bertholletia excelsa H. B. K.) almond marketed in open markets in the Amazon

Resumo: The present study aimed to investigative the micrbiological quality of Brazil nuts sold in open markets in the city of Macapá-AP. Samples of fresh almonds were collected at 3 open markets in Macapá from September to October 2018. Microbiological analyzes for thermotolerant coliforms and Salmonella sp were performed according to procedures described by MAPA (Ministry of Agriculture, Livestock and Supply) 62, of August 26, 2003 and the results compared with RDC nº 12, of January 2, 2001. The results showed the presence of levels of thermotolerant coliforms above the limits established by the legislation in at least one sample of each evaluated fair, being presence of Salmonella sp. The analysis results indicate that all fairs presented unsatisfactory samples, corresponding to 33,33% of the total in fairs I and III and 66,67% at fair II. Therefore, the analyzes point to the need to intensify sanitary inspection, as well as to devise more effective actions to guide and sensitize marketers to adopt good practices in handling this Amazonian delicacy.

Se recolectaron muestras de almendras frescas em 3 mercados abiertos em Macapá de septiembre a octubre de 2018. Se realizaron análisis microbiológicos para coliformes termotolerantes y Salmonella sp según los procedimentos descritos por MAPA (Ministerio de Agricultura, Ganadería y Abastecimiento) 62, del 26 de agosto de 2003 y los resultados comparados com el RDC nº 12, del 2 de enero de 2001. Los resultados mostraron la presencia de niveles de coliformes termotolerantes por encima de los limites estabelecidos por la legislación em al menos una muestra de cada feria evaluada, siendo presencia de Salmonella sp. Los resultados del análisis indican que todas las férias presentaron muestras insatisfactorias, correspondientes al 33,33% del total em las férias I y III y al 66,67% enla feria II. Por ello, los análisis apuentan a la necesidad de intensificar la fiscalización sanitária, así como elaborar acciones más efectivas para orientar y sensibilizar a los comercializadores hacia la adopción de buenas prácticas em el manjo de este manjar amazónico.O presente estudo teve como objetivo investigar a qualidade microbiológica da Castanha-do-Brasil comercializada em feiras livres do município de Macapá-AP. As amostras de amêndoas  in natura foram coletadas em 3 feiras livres de Macapá no período de setembro a outubro de 2018. As análises microbiológicas para coliformes termotolerantes e de Salmonella sp foram realizadas conforme procedimentos descritos pelo MAPA (Ministério da Agricultura, Pecuária e Abastecimento) nº 62, de 26 de agosto de 2003 e os resultados comparados com a RDC Nº12, de 02 de janeiro de 2001. Os resultados evidenciaram presença de níveis de coliformes termotolerantes acima dos limites estabelecidos pela legislação em pelo menos uma amostra de cada feira avaliada, sendo também detectada presença de Salmonella sp. Os resultados das análises indicam que todas as feiras apresentaram amostras insatisfatórias, correspondendo a 33,33% do total nas feiras I e III e 66, 67% na feira II.
