Sensory taste receptors and ageusia associated with SARS-CoV-2 infection: literature review

Resumo: | Coronavirus Disease-2019 (COVID-19), the largest recorded pandemic of the 21st century, is an acute respiratory infection with potential severity. Among the symptoms resulting from the disease, sensory loss, such as ageusia, represents a challenge among researchers, since the mechanisms related to viral pathophysiology against neurosensitive cells are not yet fully understood. Given this context, this study aimed to review the recent literature on loss of taste sensation and SARS-CoV-2 infection. To this end, a narrative review was carried out, searching articles from the main databases, such as PubMed, Scielo, and Google Scholar, and selecting those that had affinity with the proposed theme. Through the study, it was found that ageusia is a common symptom in patients with COVID-19, mainly due to the significant presence of cell receptors that mediate the viral infection in the oral region. Mechanisms suggested to explain this loss of sensation involve damage to the taste nerves, deficiencies in serum and salivary zinc levels, interaction with sialic acid receptors, and the pro-inflammatory cytokine storm response itself to the viral attack. This review allowed the identification of several mechanisms suggested as potential causes of ageusia in SARS-CoV-2 infected patients, enabling an initial understanding regarding the topic and a direction for further studies. |

Entre los síntomas decurrentes de la enfermedad, la pérdida sensorial, como la ageusia, representa un desafío entre los investigadores, una vez que los mecanismos relacionados con la fisiopatología viral contra las células neurosensibles aún no están totalmente esclarecidos. Teniendo en cuenta este contexto, el presente estudio tuvo como objetivo revisar la literatura reciente sobre la pérdida de la sensación del gusto y la infección por el SARS-CoV-2. Para ello, se realizó una revisión narrativa, buscando artículos en las principales bases de datos, como PubMed, Scielo y Google Académico, y seleccionando aquellos que tuvieran afinidad con el tema propuesto. A través del estudio, se encontró que la ageusia es un síntoma común en los pacientes con COVID-19, principalmente debido a la presencia significativa de receptores celulares que median la infección viral en la región oral. Los mecanismos sugeridos para explicar esta pérdida de sensibilidad implican el daño a los nervios del gusto, las deficiencias en los niveles de zinc sérico y salival, la interacción con los receptores de ácido siálico y la propia respuesta de la tormenta de citoquinas proinflamatorias al ataque viral. Esta revisión ha permitido identificar varios mecanismos sugeridos como posibles causas de la ageusia en pacientes infectados por el SARS-CoV-2, lo que ha permitido realizar una comprensión inicial en relación con el tema y una guía para estudios más profundos.A Doença do Coronavírus-2019 (COVID-19), maior pandemia registrada no século XXI, se trata de uma infecção respiratória aguda com potencial gravidade. Dentre os sintomas decorrentes da doença, a perda sensorial, como a ageusia, representa um desafio entre pesquisadores, uma vez que os mecanismos relacionados à fisiopatologia viral contra as células neurosensitivas ainda não estão totalmente esclarecidos. Diante desse contexto, esse estudo visou revisar a literatura recente sobre a perda da sensação do paladar e a infecção por SARS-CoV-2. Para isso, foi realizado uma revisão narrativa, pesquisando artigos das principais bases de dados, como PubMed, Scielo e Google Acadêmico, e selecionando os que possuíam afinidade com a temática proposta. Através do estudo, verificou-se que a ageusia é um sintoma comum em pacientes com COVID-19, devido, principalmente, à presença significativa dos receptores celulares que medeiam a infecção viral na região oral.
