Consumer profile of Amazon river prawn in the Pará State: socioeconomic, consumption frequency and preferences

Resumo: | The Amazon river prawn Macrobrachium amazonicum is a fishing resource exploited for subsistence and commercial purposes in the Pará State, being consumed by members of all social classes. The objective of this study was to analyze the consumer profile of Amazon river prawn in the Pará State. In the period from February to August 2019, a total of 1,260 were administered to fish consumers in the municipalities of Belém, Cametá, Tucuruí, Santarém, Altamira and Breves. Socioeconomic and consumption information were tabulated on spreadsheets and presented using descriptive statistics. It was found that 92.3% of the public addressed consumed the crustacean and that 82% of this total had a monthly family income of up to two minimum wages. Regarding the frequency, 37.2% reported consuming the product at least once a week. The consumption preference of 71.7% was for whole shrimp and 54.2% prioritized the purchase of live or fresh product. The low exigency of most consumers in terms of presentation and conservation the product is mainly due to the low purchasing power and the culture of purchasing foodstuffs in public spaces. |

El objetivo de este estudio fue analizar el perfil del consumidor de Camarón de rio en el territorio de Pará. Entre febrero y agosto de 2019, se administraron 1.260 cuestionarios a consumidores de pescado en los municipios de Belém, Cametá, Tucuruí, Santarém, Altamira y Breves. La información socioeconómica y de consumo se tabuló en hojas de cálculo y se presentó utilizando estadísticas descriptivas. Se encontró que el 92.3% del público abordado consumía el crustáceo y que el 82% de este total tenía un ingreso familiar mensual de hasta dos salarios mínimos. En términos de frecuencia, el 37.2% informó consumir el producto al menos una vez a la semana. La preferência de 71.7% fue para camarones enteros y 54.2% priorizó la compra de productos vivos o frescos. La baja demanda de la mayoría de los consumidores con respecto a la presentación y conservación del producto se debe principalmente a la reducción del poder adquisitivo y la cultura de compra de alimentos en espacios públicos.O camarão-da-Amazônia Macrobrachium amazonicum é um recurso pesqueiro explorado com fins de subsistência e comerciais no estado do Pará, sendo consumido por membros de todas as classes sociais. O objetivo deste estudo foi analisar o perfil do consumidor de camarão-da-Amazônia no território paraense. Entre fevereiro e agosto de 2019 foram aplicados 1.260 questionários à consumidores de pescado dos municípios de Belém, Cametá, Tucuruí, Santarém, Altamira e Breves. As informações socioeconômicas e referentes ao consumo foram tabuladas em planilhas eletrônicas e apresentadas por meio de estatística descritiva. Constatou-se que 92,3% do público abordado consumia o crustáceo e que 82% deste total possuía renda familiar mensal de até dois salários mínimos. Em termos de frequência, 37,2% declarou consumir o produto pelo menos uma vez por semana. A preferência de 71,7% era pelo camarão inteiro e 54,2% priorizavam a compra do produto vivo ou fresco.
