Food additives: a theoretical-practical approach in chemistry teaching

Resumo: With the growing demand of food consumption and, consequently, of industrialized products, manufacturers began to apply a large amount of chemical additives, aiming to reduce production costs, as well as to meet consumer expectations. In this way, the members of the Tutorial Education Program - PET Chemistry of the Federal Institute of Paraíba - IFPB, Campus João Pessoa, developed a research activity with the purpose of approaching the problem "Food additives", in line with the teaching of Chemistry. The study was developed in a class of the 9th grade of Elementary School, at Escola Cidadã Integral (ECI) José Lins do Rego, located in the municipality of Pilar, Paraíba, Brazil. The application took place remotely, through the online transmission platform "Google Meet", and 12 (twelve) students participated in the survey. The methodologies used were qualitative and participatory, and data collection took place through a Survey Instrument (IS) and a Playful Assessment Instrument (IAL), built in “Google Forms”. The results obtained were promising, since the debate stimulated the exchange of empirical knowledge among the students, as well as the perception of the consumption of food additives in their daily lives, and the experiment presented confirmed the theory presented in the classroom.

De esta forma, los integrantes del Programa de Educación Tutorial - PET Química del Instituto Federal de Paraíba - IFPB, Campus João Pessoa, desarrollaron una actividad de investigación con el objetivo de abordar el problema "Aditivos alimentarios", en línea con la enseñanza de la Química. . El estudio fue desarrollado en una clase del 9º grado de la Enseñanza Fundamental, en la Escola Cidadã Integral (ECI) José Lins do Rego, ubicada en el municipio de Pilar, Paraíba, Brasil. La aplicación se realizó de forma remota, a través de la plataforma de transmisión en línea "Google Meet", y 12 (doce) estudiantes participaron de la encuesta. Las metodologías utilizadas fueron cualitativas y participativas, y la recolección de datos se realizó a través de un Instrumento de Encuesta (IS) y un Instrumento de Evaluación Lúdica (IAL), construidos en “Google Forms”. Los resultados obtenidos fueron prometedores, ya que el debate estimuló el intercambio de conocimientos empíricos entre los estudiantes, así como la percepción del consumo de aditivos alimentarios en su cotidiano, y el experimento presentado confirmó la teoría presentada en el aula.Com a crescente demanda do consumo alimentício e, consequentemente, dos produtos industrializados, os fabricantes passaram a aplicar uma grande quantidade de aditivos químicos, objetivando reduzir os custos da produção, bem como corresponder às expectativas dos consumidores. Desta forma, os integrantes do Programa de Educação Tutorial – PET Química do Instituto Federal da Paraíba – IFPB, Campus João Pessoa, elaboraram uma atividade de pesquisa com a finalidade de abordar a problemática “Aditivos alimentares”, coadunando com o ensino de Química. O estudo foi desenvolvido em uma turma do 9ºano do Ensino Fundamental, da Escola Cidadã Integral (ECI) José Lins do Rego, localizada no município de Pilar, Paraíba, Brasil. A aplicação aconteceu remotamente, por meio da plataforma de transmissão online “Google Meet”, e participaram da pesquisa 12 (doze) alunos. As metodologias utilizadas foram qualitativa e participante, e o recolhimento dos dados sucedeu-se por intermédio de um Instrumento de Sondagem (IS) e um Instrumento Avaliativo Lúdico (IAL), construídos no “Google Forms”.
