Proximate composition of the mollusk Paxyodon syrmatophorus (Gmelin, 1791) (Bivalvia: Hyriidae) consumed on Tabatinga Island, Eastern Amazon

Resumo: | Fishing resources (e.g., fish, crustaceans and mollusks) make up the diet of populations, as they represent a source of protein. In this context, bivalve mollusks are of high ecological and socioeconomic importance, especially for communities that live along riverbanks. In this way, the present work registers the use of Paxyodon syrmatophorus as food by the native community of the island of Tabatinga, Abaetetuba, state of Pará, as well as, characterizes the centesimal composition of the mollusk. There were two types of preparation of the mollusk (scalded and stewed), always using simple seasonings in the cooking of the food. In addition, it was verified that the species presents a high moisture and protein content in its composition, with low lipid and calories, presenting in an average yield of the edible meat in 16.2%. It is concluded that the use of freshwater bivalves in the region is a source of subsistence for the inhabitants, who use their empirical knowledge in the organization of the preparation of P. syrmatophorus. Bivalve has a satisfactory centesimal composition and a complementary nutritional need. Studies on growth and reproduction are recommended to infer measures for sustainable resource management and subsequent use of shells. |

En este contexto, los moluscos bivalvos son de gran importancia ecológica y socioeconómica, especialmente para las comunidades que viven a orillas de los ríos. Así, el presente trabajo registra el uso de Paxyodon syrmatophorus como alimento por parte de la comunidad nativa de la isla de Tabatinga, Abaetetuba, Estado de Pará, así como también caracteriza la composición centesimal del molusco. Se evidenciaron dos tipos de preparación de moluscos (blanqueados y estofados), siempre usando especias simples para cocinar los alimentos. Además, se encontró que la especie tiene una alta tasa de humedad y proteínas en su composición, con un bajo contenido de lípidos y calorías, presentando un rendimiento promedio de carne comestible en 16.2%. Se concluye que el uso de bivalvos de água dulce en la región se presenta como una fuente de subsistencia, utilizando el conocimiento empírico en la organización de la preparación de P. syrmatophorus. El bivalvo tiene una composición centesimal satisfactoria para las necesidades nutricionales complementarias. Se recomiendan estudios sobre crecimiento y reproducción para inferir medidas para la gestión sostenible de los recursos y el uso posterior de conchas.Os recursos pesqueiros (e.g., peixes, crustáceos e moluscos) compõem a dieta alimentar das populações, pois representa uma fonte de proteína. Evidenciou-se dois tipos de preparo do molusco (escaldado e refogado), utilizando sempre temperos simples na cocção do alimento. Além disso verificou-se que a espécie apresenta alta taxa de umidade e proteínas em sua composição, com baixo teor de lipídio e calorias, apresentando em média rendimento da carne comestível em 16,2%. Conclui-se que a utilização dos bivalves de água doce na região apresenta-se como uma fonte de subsistência, utilizando conhecimentos empíricos na organização do preparo de P. syrmatophorus. O bivalve apresenta composição centesimal satisfatória a necessidade nutricional complementar.
