Entomophagy: a preliminary study on the perception of students of Animal Science and Veterinary Medicine in Brazil

Resumo: The research aims to prospect information related to the perception of students of Animal Science and Veterinary Medicine in Brazil regarding the use and acceptance of insects and their by-products in animal and human food. A study was conducted based on objective questions in an online form designed to collect the necessary data, classified as a descriptive exploratory cross-sectional study on the subject. A total of 432 answers were distributed among the regions of Brazil, namely: Northeast (68.4%), Southeast (12.8%), South (11.4%), North (4.4%) and Midwest (3%). The results show that 76.9% of the students know about the use of insects in human and animal food, but only 48.1% would recommend insect-based feeding. Even with 84.3% not having entomophobia and knowing about entomophagy, only 30.1% would ingest a bread made from insect flour, and would recommend to other people the consumption of this type of ingredient. Finally, it is pertinent to infer that the use of insects in human and animal food, despite being known by this sample group, is still superficial and with several paradigms, which make their effective use impossible. It is suggested that entomophagy be included in the curricular projects of Animal Science and Veterinary Medicine courses, so that this knowledge can really be a viable alternative for the production of alternative protein in Brazil.

Se realizó un estudio basado en preguntas objetivas en un formulario en línea diseñado para recopilar los datos necesarios, clasificado como descriptivo exploratorio transversal sobre el tema abordado. Se distribuyeron 432 respuestas entre las regiones de Brasil, a saber: Noreste (68,4%), Sureste (12,8%), Sur (11,4%), Norte (4,4%) y Medio Oeste (3%). Los resultados muestran que el 76,9% de los estudiantes conoce el uso de insectos en la alimentación humana y animal, pero sólo el 48,1% recomendaría la alimentación a base de insectos. A pesar de que el 84,3% no tiene entomofobia y conoce la entomofagia, sólo el 30,1% ingeriría un pan elaborado con harina de insectos y recomendaría el consumo de este tipo de ingrediente a otras personas. Finalmente, es pertinente inferir que el uso de insectos en la alimentación humana y animal, a pesar de ser conocido por este grupo muestral, aún es superficial y con varios paradigmas, que imposibilitan el uso efectivo. Se sugiere que la entomofagia sea incluida en los proyectos curriculares de los cursos de Zootecnia y Medicina Veterinaria, para que este conocimiento sea realmente una alternativa viable para la producción de proteína alternativa en Brasil.A pesquisa objetiva prospectar informações relacionadas sobre a percepção dos discentes de Zootecnia e Medicina Veterinária no Brasil em relação ao uso e aceitação de insetos e seus subprodutos na alimentação animal e humana. Foi realizado um estudo a partir de perguntas objetivas em um formulário online elaborado para coletar os dados necessários, classificado como descritivo exploratório de caráter transversal sobre o tema abordado. Totalizou-se 432 respostas distribuídas entre as regiões do Brasil, a saber: Nordeste (68,4%), Sudeste (12,8%), Sul (11,4%), Norte (4,4%) e Centro-Oeste (3%). Os resultados mostram que 76,9% dos discentes conhecem o uso de insetos na alimentação humana e animal, porém somente 48,1% recomendariam a alimentação à base de insetos. Mesmo com 84,3% não possuindo entomofobia e conhecendo a entomofagia, apenas 30,1% fariam ingestão de um pão fabricado a partir da farinha dos insetos, e recomendaria para outras pessoas o consumo deste tipo de ingrediente. Por fim, é pertinente inferir que o uso de insetos na alimentação humana e animal, apesar de ser conhecido por este grupo amostral, é ainda superficial e com diversos paradigmas, os quais impossibilitam o uso efetivo.
