Quality of refrigerated raw milk produced in the microregion of Pires do Rio, Goiás, Brazil

Resumo: The aim of the present study was to analyze the somatic cell count (SCC), total bacterial count (TBC), fat, protein, lactose, total dry extract (TDE) and defatted dry extract (DDE) of milk produced in the Pires do Rio – Goiás, Brazil, taking into account the parameters described in Normative Instruction 76, of November 26, 2018. Milk samples were collected from 86 farms with different types of milking, which were analyzed by the Quality Laboratory. Milk from the Center for Food Research of the School of Veterinary and Animal Science of the Federal University of Goiás, in the city of Goiânia. Data were submitted to the nonparametric Kruskal-Wallis test for comparison of median values, adopting a significance level of 5%. Of the properties analyzed, 26 have manual milking and 60 mechanized milking, all parameters were observed in accordance with the minimum and maximum limits defined by IN 76/2018, with the average values of SCC and TBC, 356.441x 10³ cells per mL-1 and 60.047. x10³ colony forming units per mL-1, respectively. From the analyzed parameters it was possible to notice that the milk from the mechanical milking presented higher levels of SCC than the samples from the manual milking, besides the disagreement regarding the protein and lactose values between the different types of milking. Concluding that the milk produced in the Pires do Rio microregion – Goiás, extracted by mechanical and manual milking, is in accordance with the standards established by IN 76/2018.

Concluding that the milk produced in the Pires do Rio microregion – Goiás, extracted by mechanical and manual milking, is in accordance with the standards established by IN 76/2018.El presente estudio tuvo como objetivo analizar el recuento de células somáticas (RCS), el recuento total de bacterias (RTB), grasas, proteínas, lactosa, extracto seco total (EST) y extracto seco desgrasado (ESD) de la leche producida en el microrregión de Pires do Rio - Goiás, Brasil, teniendo en cuenta los parámetros descritos en la Instrucción Normativa número 76, del 26 de noviembre de 2018. Se recogieron muestras de leche de 86 propiedades con diferentes tipos de ordeño, que fueron analizadas por el Laboratorio de Calidad de la leche en el Centro de Investigación de Alimentos de la Facultad de Veterinaria y Ciencia Animal, Universidad Federal de Goiás, en la ciudad de Goiânia. Los datos se enviaron a la prueba no paramétrica de Kruskal-Wallis para comparar los valores medianos, con un nivel de significancia del 5%. De las propiedades analizadas, 26 tienen ordeño manual y 60 ordeño mecanizado, todos los parámetros se observaron de acuerdo con los límites mínimo y máximo definidos en IN 76/2018, con los valores medios de RCS y RTB, 356,441 x10³ células por mL-1 y 60,047 x10³ unidades formadoras de colonias por mL-1, respectivamente. A partir de los parámetros analizados, fue posible notar que la leche de ordeño mecánico mostró niveles de RCS más altos que los de las muestras de ordeño manual, además del desacuerdo con respecto a los valores de proteína y lactosa entre los diferentes tipos de ordeño. Por lo tanto, la leche producida en la microrregión Pires do Rio – Goiás, extraída por ordeño mecánico y manual, cumple con las normas establecidas en IN 76/2018.O presente estudo teve por finalidade analisar os índices de contagem de células somáticas (CCS), contagem bacteriana total (CBT), teor de gordura, proteína, lactose, extrato seco total (EST) e extrato seco desengordurado (ESD) do leite produzido na microrregião de Pires do Rio – Goiás, Brasil, levando em consideração os parâmetros descritos na Instrução Normativa número 76, de 26 de novembro de 2018. Foram coletadas amostras de leite de 86 propriedades com diferentes tipos de ordenha, as quais foram analisadas pelo Laboratório de Qualidade do Leite do Centro de Pesquisa em Alimentos da Escola de Veterinária e Zootecnia da Universidade Federal de Goiás, na cidade de Goiânia. Os dados foram submetidos ao teste não paramétrico de Kruskal-Wallis para comparação dos valores medianos, sendo adotado o nível de significância de 5%. Das propriedades analisadas, 26 possuem ordenha manual e 60 ordenha mecanizada, notou-se todos os parâmetros em concordância aos limites mínimos e máximos definidos ela IN 76/2018, sendo os valores médios de CCS e CBT, 356,441x 10³ células por mL-1 e 60,047 x10³ unidades formadoras de colônia por mL-1, respectivamente. Dos parâmetros analisados foi possível notar que o leite proveniente da ordenha mecânica apresentou níveis de CCS superiores aos das amostras provenientes de ordenha manual, além da discordância em relação a valores de proteína e lactose entre os diferentes tipos de ordenha.
