Resumo: | The objective of this study was to evaluate the quality of eggs packaged in different types of packaging and stored at marketing stations in the municipality of São João del-Rei, over 35 days. 360 white eggs from Hy Line W36 liners were used, distributed in a completely randomized experimental design in a 2x3x5 factorial scheme (two storage locations / supermarkets (S1 and S2), 3 types of packaging (Styrofoam (Iso), plastic (Plas ) and cellulose (Cel)) and five evaluation periods: 7, 14, 21, 28 and 35 days), totaling 30 treatments with four repetitions, consisting of 3 eggs each. The data obtained for each parameter were subjected to analysis of variance, adopting a significance level of 5%. In case of statistical significance (P <0.05) for interaction between the period, type of packaging and supermarket, linear or quadratic regression models were adjusted for the response variables. Weight loss, albumen height, average albumen diameter and Haugh unit showed interaction (p <0.05) between Period, Supermarket and Packaging. Specific gravity decreased (p <0.05) after the 21st day of storage. The yolk and albumen pH and shell rate were not affected (p> 0.05) by the type of packaging. The eggs evaluated at 35 days showed high pH and yolk rate (p <0.05) and reduced pH and albumen rate (p <0.05). The storage period negatively affects the internal quality characteristics of the eggs. The plastic and Styrofoam packaging have better results in maintaining the quality of eggs over time, the first being more suitable. The location where the eggs are stored influences the quality of the egg. There was a difference between supermarkets. |

There was a difference between supermarkets.El objetivo de este estúdio fue evaluar lacalidad de los huevos embalados en diferentes tipos de envases y empaquetados en las temporadas de comercialización en el municipio de São João del - Rei, MG, durante más de 35 días. Se utilizaron 360 huevos blancos de línea HyLine W36, distribuídos en un diseño experimental completamente al azar en un esquema factorial 2x3x5 (dos ubicaciones de almacenamiento / supermercados (S1 y S2), 3 tipos de envases (espuma de poliestireno (Iso), plástico (Plas ) y celulosa (Cel)) con cinco períodos de evaluación: 7, 14, 21, 28 y 35 días), totalizando 30 tratamientos con cuatro repeticiones, que consisten en 3 huevos cada uno. Los datos obtenidos para cada parametro fueron sometidos a análisis de varianza, adoptando un nivel de significância del 5%. En caso de significancia estadística (P <0.05) para la interacción entre el período, el tipo de empaque y el supermercado, se ajustaron modelos de regresión lineal o cuadrática para las variables de respuesta. La pérdida de peso, la altura de la albúmina, el diâmetro promedio de la albúmina y la unidad de Haugh mostraron interacción (p <0.05) entre Periodo, Supermercado y Empaque. La gravedad específica disminuyó (p <0.05) después del día 21 de almacenamiento. El pH de layema y la albúmina no se vieron afectados (p> 0.05) por el tipo de empaque. Los huevos evaluados a los 35 días mostraron un alto pH y una tasa de yema (p <0.05) y una tasa reducida de pH y albúmina (p <0.05). El período de almacenamiento afecta negativamente las características de calidad interna de los huevos. El empaque de plástico y espuma de poliestireno tiene mejores resultados para mantener lacalidad de los huevos con el tiempo, siendo el primero más adecuado. La ubicación donde se almacenanlos huevos influye en la calidad del huevo. Hubo una diferencia entre los supermercados.Objetivou-se avaliar a qualidade de ovos acondicionados em diferentes tipos de embalagens e armazenados em postos de comercialização no município de São João del-Rei, ao longo de 35 dias. Foram utilizados 360 ovos brancos oriundos de poedeiras da linhagem HyLine W36, distribuídos em delineamento experimental inteiramente casualizado em esquema fatorial 2x3x5 (dois locais de armazenamento/supermercados (S1 e S2), 3 tipos de embalagem (isopor (Iso), plástico (Plas) e celulose (Cel)) e cinco períodos de avaliação: 7, 14, 21, 28 e 35 dias), totalizando 30 tratamentos com quatro repetições, composta de 3 ovos cada. Os dados obtidos para cada parâmetro foram submetidos a análises de variância, adotando-se nível de significância de 5%. Em caso de significância estatística (P<0,05) para interação entre o período, tipo de embalagens e supermercado, foram ajustados modelos de regressão linear ou quadrático para as variáveis resposta. A perda de peso, altura do albúmen, diâmetro médio do albúmen e unidade Haugh apresentaram interação (p<0,05) entre Período, Supermercado e Embalagens.A gravidade específica reduziu (p<0,05) a partir do 21° dia de estocagem. O pH de gema e albúmen e taxa de casca, não foram afetados (p>0,05) pelo tipo de embalagem. Os ovos avaliados aos 35 dias apresentaram pH da e taxa de gema elevados (p<0,05) e pH e taxa do albúmen reduzidos (p<0,05). O período de estocagem interfere negativamente nas características de qualidade interna dos ovos. A embalagem de plástico e isopor apresentam melhores resultados na manutenção da qualidade dos ovos no decorrer do tempo, sendo a primeira mais indicada. O local onde os ovos são armazenados influencia na qualidade do ovo.
