Evaluation of the physical and physical chemical characteristics of araçá Psidium brownianum Mart. ex DC. (Araçá-de-veado)

Resumo: The araçazeiro is a fruit tree native to Brazil, belonging to the Myrtaceae family, and can be found from the state of Rio Grande do Sul, through Minas Gerais, to the Northeast region. There are many species of araçá, but depending on the region there are different interests in carrying out studies about its characterization, pointing out that this fruit has excellent physical-chemical characteristics, great economic potential and can be considered indispensable in the regeneration of degraded areas.  These fruit characteristics make the araçazeiro a new and promising option for cultivation, bringing benefits to consumers and becoming an alternative for sustainable exploitation for small rural producers. The processing of native fruits as araçá meets the growing industrial interest for exotic products, besides being extremely accepted by consumers. As for the araçá fruits existing in the Araripe Forest, no information on physical and chemical parameters was found in the literature, thus the objective was to determine the physical and chemical characteristics (SS, pH, AT, SS/AT, reducing and non-reducing sugars) and physical characteristics such as: whole fruit mass, pulp mass, pulp yield. From the results obtained for araçá it was possible to verify that due to its low degree of sweetness it does not have great acceptance for consumption of the fruit in natura. It presents potential for industrialization and one of the contributing factors is the uniformity of format, slightly rounded, good yield in pulp, low pH and high concentrations of acidity.

Existen muchas especies de araçá, pero dependiendo de la región hay diferentes intereses en realizar estudios sobre su caracterización, señalando que este fruto tiene excelentes características físico-químicas, gran potencial económico y puede considerarse indispensable en la regeneración de áreas degradadas.  Estas características del fruto hacen del araçazeiro una nueva y prometedora opción de cultivo, que aporta beneficios a los consumidores y se convierte en una alternativa de explotación sostenible para los pequeños productores rurales. El procesamiento de frutas nativas como el araçá responde al creciente interés industrial por los productos exóticos, además de ser muy aceptado por los consumidores. En cuanto a los frutos de araçá existentes en el Bosque de Araripe, no se encontró información sobre parámetros físicos y químicos en la literatura, por lo que el objetivo fue determinar las características físicas y químicas (SS, pH, AT, SS/AT, azúcares reductores y no reductores) y las características físicas como: masa de frutos enteros, masa de pulpa, rendimiento de la pulpa. A partir de los resultados obtenidos para el araçá se pudo comprobar que debido a su bajo grado de dulzura no tiene gran aceptación para el consumo del fruto en la naturaleza. Presenta un potencial de industrialización y uno de los factores que contribuyen a ello es la uniformidad de formato, ligeramente redondeado, buen rendimiento en pulpa, bajo pH y altas concentraciones de acidez.O araçazeiro é uma fruteira nativa do Brasil, pertencente à família Myrtaceae, podendo ser encontrada desde o Estado do Rio Grande do Sul, passando por Minas Gerais, até a região Nordeste. São muitas espécies de araçá, mas dependendo da região existem diferentes interesses em realizar estudos quanto a sua caracterização, ressaltando que essa fruta possui excelentes características físico-químicas, grande potencial econômico e podem ser consideradas imprescindíveis na regeneração de áreas degradadas.  Essas características dos frutos tornam o araçazeiro uma nova e promissora opção de cultivo, trazendo benefícios aos consumidores e tornando-se uma alternativa para a exploração sustentada para os pequenos produtores rurais. O beneficiamento dos frutos nativos como araçá atende a crescente interesse industrial por produtos exóticos, além de ser extremamente aceito pelos consumidores. Quanto aos frutos de araçá existentes na Floresta do Araripe; não foram encontradas informações na literatura, relativas aos parâmetros físicos e químicos, sendo assim objetivou-se determinar as características físico-químicas (SS, pH, AT, SS/AT, açúcares redutores e não-redutores) e as características físicas como: massa do fruto inteiro, massa da polpa, rendimento de polpa. Dos resultados obtidos para araçá foi possível verificar que devido seu baixo grau de doçura não possui grande aceitação para consumo do fruto in natura.
