Acceptability of hospital diets by patients admitted to a university hospital

Resumo: Hospital diets aim to meet the demands of patients arising from the nutritional and pathophysiological status in which they find themselves, and it is important to consider the individuality of each patient to prescribe a diet that meets the nutritional needs, and, for this, factors such as weight, height, caloric requirements, macronutrient distribution, nutrient restriction, food habits and preferences. The present study aimed to evaluate the acceptability of oral diets provided at a university hospital. This is a population-based study with a quantitative, observational and descriptive approach. The evaluation of the acceptance of diets was carried out through a questionnaire with closed questions regarding the degree of acceptance of the diets offered according to small and large meals, with variables for classification and control of food intake. The collected data were tabulated with the help of the SPS S 22.0 SOFTWARE and the referring EXCEL, and through these tables and graphs were constructed, in order to have a better understanding of the results obtained. Data analysis was performed using descriptive statistics with mean measurements, frequency measurements and non-parametric statistics with the Chi-square test, considering a significance level of 95% and a 5% margin of error. Values of p<0.05 were considered statistically significant. Of the 217 patients, there was a predominance of males. However, the acceptance of the diet was considered good/excellent when analyzing the acceptability of meals provided by the hospital.

O presente estudo objetivou avaliar a aceitabilidade das dietas orais fornecidas em um hospital universitário. Trata-se de estudo de base populacional com abordagem quantitativa, observacional e descritiva. A avaliação da aceitação das dietas foi alimentar mediante questionario onde constavam perguntas datadas referentes ao grau de aceitação das dietas oferecidas de acordo as small e grandes refeições, com variaveis para classificação e controle de ingestão. Os dados coletados foram tabulados com auxílio do SOFTWARE SPS S 22.0 e EXCEL referencia e por meio destes foram construídos tabelas e gráficos, un fim de ter uma melhor compreensão dos resultados obtenidos. A análise dos dados foi realizada por meio de estatística descritiva con medidas de média, medida de freqüência e estatística não paramétrica com teste Qui-quadrado considerando nível de significância de 95% e margem de erro de 5%. Foram considerados estatisticamente significativos valores de p <0,05. Dos 217 pacientes, houve predominaínio do sexo masculino.Contudo, a aceitação da diet foi consideradas como boa / ótima quando analisado a aceitabilidades das refeições fornecidas hair hospital.
