Physicochemical, hygienic and microbiological characteristics of raw milk and water in dairy farms in Teresina, PI

Resumo: The lack of quality in milk can cause significant economic and technological losses for both the industry, as well as for producers and consumers. The present work had as objective to evaluate the physical - chemical and hygienic - sanitary characteristics of the raw milk and the water used in the production of the dairy properties of the Municipality of Teresina, PI. 12 milk samples and 12 water samples were collected and analyzed. For the physical-chemical analysis of milk, the Ekomilk total milk analyzer and Dornic acidimeter were used. For microbiological analyzes of milk and water, Total Bacterial Counting (CFU / mL) was performed and for the detection of total coliforms and E. coli (NMP / 100mL in water, Colilert® (IDEXX) was used. % of the properties analyzed are in disagreement with the standards required for food production establishments of animal origin, not simultaneously corresponding to the qualities required for milk quality and water potability.

El presente trabajo tuvo como objetivo evaluar las características físico-químicas e higiénicas-sanitarias de la leche cruda y el agua utilizada en la producción de propiedades lácteas en la ciudad de Teresina, PI. Se recogieron y analizaron 12 muestras de leche y 12 muestras de agua. Para el análisis físico-químico de la leche, se utilizaron el analizador de leche total Ekomilk y el acidímetro Dornic. Para los análisis microbiológicos de la leche y el agua, se realizó el recuento bacteriano total (UFC / ml) y para la detección de coliformes totales y E. coli (NMP / 100 ml en agua, se usó Colilert® (IDEXX). El% de las propiedades analizadas están en desacuerdo con los estándares requeridos para los establecimientos de producción de alimentos de origen animal, y no corresponden simultáneamente a las cualidades requeridas para la calidad de la leche y la potabilidad del agua.A falta de qualidade no leite pode ocasionar perdas econômicas e tecnológicas significativas tanto para a indústria, como para produtores e consumidores. O presente trabalho teve como objetivo avaliar as características físico-químicas e higiênico-sanitárias do leite cru e da água utilizada na produção das propriedades leiteiras do Município de Teresina, PI. Foram coletadas e analisadas 12 amostras de leite e 12 amostras de água. Para as análises físico-químicas do leite utilizou-se o analisador de leite Ekomilk total e o acidímetro de Dornic. Para as análises microbiológicas do leite e da água realizou-se Contagem Bacteriana Total (UFC/mL) e para detecção de coliformes totais e E.coli (NMP/100mL na água utilizou-se o Colilert® (IDEXX).
