Acceptance of school feeding in public institutions - systematic review

Resumo: | Adequate nutrition is one of the essential factors for healthy growth and development at all stages of life. Thus, school feeding aims to partially meet the nutritional needs of students and thus promote healthy eating in the school environment. The objective of this study is to evaluate the quality of school meals, through acceptability tests that are carried out directly with students. This is a systematic review. The following databases were used for data collection: electronic Scientific Eletronic Library Online (SCIELO), Latin American Caribbean Literature in Public Health (LILACS), US National Library of Medicine (PUBMED), Periodic Coordination for the Improvement of Higher Education Personnel (CAPES). After reading the articles, 11 duplicate articles were eliminated, of which 59 articles remained. Of these, 30 were excluded after reading the abstracts. Of the 29 eligible articles, 19 were excluded for the following reasons: insignificant sample, literature review, articles published more than ten years ago. Most of the studies analyzed obtained an acceptability index for school meals above 50%, but the majority did not reach 85% in the sum of the results expressed by the acceptability tests. However, when the acceptance is below this value, there is a reduction in food resources, inadequate planning of menus and types of preparations. |

Una nutrición adecuada es uno de los factores esenciales para un crecimiento y desarrollo saludables en todas las etapas de la vida. Por lo tanto, la alimentación escolar tiene como objetivo satisfacer parcialmente las necesidades nutricionales de los estudiantes y así promover una alimentación saludable en el entorno escolar. El propósito de este estudio es evaluar la calidad de las comidas escolares, a través de pruebas de aceptabilidad que se llevan a cabo directamente con los estudiantes. Esta es una revisión sistemática. Se utilizaron las siguientes bases de datos para la recopilación de datos: Biblioteca Electrónica Electrónica Electrónica en línea (SCIELO), Literatura del Caribe Latinoamericano en Salud Pública (LILACS), Biblioteca Nacional de Medicina de EE. UU. (PUBMED), Coordinación periódica para la mejora de Personal de Educación Superior (CAPES). Después de leer los artículos, se eliminaron 11 artículos duplicados, de los cuales quedaron 59. De estos, 30 fueron excluidos después de leer los resúmenes. De los 29 artículos elegibles, 19 fueron excluidos por las siguientes razones: muestra insignificante, revisión de la literatura, artículos publicados hace más de diez años. La mayoría de los estudios analizados obtuvieron un índice de aceptabilidad para las comidas escolares por encima del 50%, pero la mayoría no alcanzó el 85% en la suma de los resultados expresados por las pruebas de aceptabilidad. Sin embargo, cuando la aceptación está por debajo de este valor, hay una reducción en los recursos alimentarios, una planificación inadecuada de los menús y los tipos de preparaciones. Por lo tanto, es importante utilizar un método de evaluación para analizar la aceptación de las comidas escolares, ya que los métodos utilizados ayudan a eliminar los alimentos no aceptados por los estudiantes y a la valorización de los alimentos bien aceptados.A alimentação adequada é um dos fatores essenciais para o crescimento e desenvolvimento saudáveis em todas as etapas da vida. Assim, a alimentação escolar objetiva suprir parcialmente as necessidades nutricionais dos alunos e com isso promover uma alimentação saudável no ambiente escolar. O objetivo desse estudo é avaliar a qualidade da alimentação escolar, mediante os testes de aceitabilidade que é realizado diretamente com os alunos. Tratase de uma revisão sistemática. Utilizou-se para a coleta de dados as seguintes bases de dados: eletrônicos Scientific Eletronic Library Online (SCIELO), Literatura Latino-Americana do Caribe em Saúde Pública (LILACS), U. S. National Library of Medicine (PUBMED), Periódicos Coordenação de Aperfeiçoamento de Pessoal de Nível Superior (CAPES). Após a leitura dos artigos foram eliminados 11 estudos duplicados, dos quais restaram 59 artigos. Desses, 30 foram excluídos após a leitura dos resumos. Dos 29 estudos elegíveis, foram excluídos 19 pelos seguintes motivos: amostra insignificante, revisão de literatura bibliográfica, artigos publicados há mais de dez anos. A maioria dos estudos analisados obteve índice de aceitabilidade da alimentação escolar acima de 50%, porém a maioria não alcançou 85% na soma dos resultados expressos pelos testes de aceitabilidade. Todavia, quando a aceitação está abaixo de 85%, há a redução dos recursos alimentícios, inadequação no planejamento de cardápios e tipos de preparações.
