Resumo: Viticulture stands out in the world economy because it is one of the larger expansion alcoholic beverage industries in the world, being in full growth in Brazil. This advance also represents an increase in waste, since about 30% of the volume of vinified grapes generates pomace. In addition, if improperly disposed, this can become an environmental and economic problem. The objective of this work was to discuss the current situation of viticulture in Brazil, with a focus on the grape pomace and the measures being taken touse as a co-product, alternatives and indications of options for the future of the sector's industries. Grape pomace has many nutrients that remain after the fruit processing such as fibers, minerals and bioactive compounds. Because of this, several alternatives have been proposed to use this residue, from utilization in fertilizers, composting or animal feed, to as raw material in the development of products for human consumption, such as in the food, pharmaceutical and cosmetic industries.

Este avance también representa un aumento en los residuos, ya que aproximadamente el 30% del volumen de uvas vinificadas genera bagazo. Además, si mal destinado, ese residuo puede convertirse en un problema ambiental y económico. El objetivo de este trabajo fue discutir la situación actual de la viticultura en Brasil, con un enfoque en sus residuos y las medidas que se están tomando para uso de estos como coproductos, alternativas e indicaciones de opciones para el futuro de las industrias del sector. El bagazo tiene muchos nutrientes que quedan después de procesar la fruta, como fibras, minerales y compuestos bioactivos. Debido a esto, se han propuesto varias alternativas para aprovechar ese residuo, desde la utilización en fertilizantes, en compostaje o en la alimentación animal, a uso como materia prima en el desarrollo de productos para el consumo humano, como en las industrias alimentaria, farmacéutica y cosmética.A vitivinicultura destaca-se na economia mundial por ser uma das indústrias de bebidas alcoólicas em maior expansão no mundo, estando em pleno crescimento no Brasil. Esse avanço também representa um aumento nos resíduos, visto que cerca de 30% do volume de uvas vinificadas gera bagaço. Além disso, se mal destinado, esse descarte pode se tornar um problema ambiental e econômico. O objetivo deste trabalho foi discutir a situação atual da vitivinicultura no Brasil, com enfoque em seus resíduos e nas medidas que estão sendo tomadas para aproveitamento desses como coproduto, alternativas de uso e indicações de opções para o futuro das indústrias do setor. O bagaço possui muitos nutrientes que permanecem após o processamento do fruto tais como fibras, minerais e compostos bioativos.
