Meat quality of broilers submitted to different types of litter with inclusion of grass

Resumo: The objective of this study was to evaluate the impact of the use of two types of aviary litter with the inclusion of levels of grass hay in these materials on the quality of chicken breasts. The design was completely randomized bewith a 3 x 2 factorial arrangement (three grass levels and two bed materials), with six replicates each, totaling 36 boxes, with 30 birds each. The treatments evaluated were: 100% wood shavings; 100% rice husk; 25% grass hay in wood shavings; 25% grass hay in rice husk; 50% grass hay in wood shavings; 50% grass hay in rice husk. At 42 days of age the chicken were slaughtered for extraction of the breast muscle. The means found of each of the treatments for the variables studied were compared by the Tukey test at the significance level of 5%. The inclusion of grass hay in wood shavings and rice husk litters changed  significantly the pH of chicken breasts , and the inclusion of 25% presented higher pH when compared to pure material. There was interference of the type of litter in relation to the shear force and the wood shavingsa material obtained lower shear force. Regarding the other variables there was no effect of the treatments. The wood shavings presented better results in relation to meat quality, when compared to rice husk, regardless of inclusion of grass hay levels.

Se utilizó el diseño experimental totalmente aleatorio, con una disposición factorial de 3 x 2 (tres niveles de gramínea y dos materiales de cama), con seis repetición cada una, con un total de 36 cajas y 30 aves cada una. Los tratamientos evaluados fueron: 100% viruta de madera; cáscara de arroz 100%; 25% heno de gramínea en la viruta de madera; 25% de heno de gramínea en la cáscara de arroz; 50% heno de gramínea en la viruta de madera; 50% de heno de gramínea en la cáscara de arroz. A los 42 días de edad las aves fueron sacrificadas para la extracción del músculo del pecho. Los promedios encontrados de cada uno de los tratamientos para las variables estudiadas fueron comparados por la prueba de Tukey en el nivel de significancia del 5%.  La inclusión del heno de gramínea en la cama de viruta de madera y la cáscara de arroz interfirió significativamente en el pH de la carne de pecho, y la inclusión del 25% presentó un pH más alto en comparación con el material puro. Hubo interferencia del tipo de cama en relación con la fuerza de cizallamiento y el material de viruta de madera obtuvo una menor fuerza de cizallamiento. En cuanto a las otras variables no hubo efecto de los tratamientos. La cama de viruta de madera presentó mejores resultados en relación con la calidad de la carne, en comparación con la cama de cáscara de arroz, independientemente de la inclusión o no de los niveles de heno de gramínea.Objetivou-se avaliar o impacto da utilização de dois tipos de cama de aviário com a inclusão de níveis de feno de gramínea nestes materiais sobre a qualidade de carne de frangos de corte. Foi utilizado o delineamento experimental inteiramente casualizado, com um arranjo fatorial de 3 x 2 (três níveis de gramínea e dois materiais de cama), com seis repetições cada, totalizando 36 boxes, e 30 aves cada. Os tratamentos avaliados foram: 100% maravalha; 100% casca de arroz; 25% feno de gramínea na maravalha; 25% feno de gramínea na casca de arroz; 50 % feno de gramínea na maravalha; 50% feno de gramínea na casca de arroz. Aos 42 dias de idade as aves foram abatidas para extração do músculo do peito. As médias encontradas de cada um dos tratamentos para as variáveis estudadas foram comparadas pelo teste de Tukey ao nível de significância de 5%.  A inclusão do feno de gramínea nas camas de maravalha e casca de arroz interferiu significativamente no pH da carne de peito, sendo que a inclusão de 25% apresentou maior pH, quando comparada com o material puro. Houve interferência (p<0,05) do tipo de cama em relação à força de cisalhamento (p<0,05) sendo que o material de maravalha obteve menor força de cisalhamento. Com relação às demais variáveis não houve efeito dos tratamentos (p>0,05).
