Preparation and implementation of a contingency plan for the hospital food and nutrition unit to face the new 2019 coronavirus (COVID-19)

Resumo: With the worldwide advance of the Coronavirus Disease pandemic 2019 (COVID-19), there was a need for changes in different food sectors, in order to prevent the spread of this virus. The objective of the work was the elaboration, implementation and implementation of a plan to combat COVID-19 in a Food and Nutrition Unit - UAN hospital in Sobral - CE. The plan was prepared initially following a survey of legislation and guidelines prepared by the competent bodies in order to collect information relevant to the composition of the UAN plan, crossing with the current situation through a checklist of the UAN's routine before the protocol is implemented and implemented. Then, strategies were developed that followed 3 phases, namely: Individual measures of the team of handlers and everyone who was part of the UAN and who attended it (hospital staff and patients' companions); Adequacy and monitoring of the environment; Way of preparing and distributing food to better guide the characterization of the protocol. The contingency plan made it possible to observe the necessary changes in the UAN, demonstrating effectiveness in relation to the care provided at the unit, in order to minimize the risks of contamination of COVID-19, due to the intensification of safety measures that were implemented. It is concluded that the elaboration of the plan was fundamental in the UAN in view of the current situation, as it is an environment with an easy chance of contamination of COVID-19, and it is necessary to guarantee everyone's safety, as the maintenance of life is of paramount importance.

El objetivo del trabajo fue la elaboración, implementación e implementación de un plan de combate a COVID-19 en una Unidad de Alimentación y Nutrición - Hospital UAN en Sobral - CE. El plan se elaboró inicialmente siguiendo un relevamiento de la legislación y lineamientos elaborados por los órganos competentes con el fin de recolectar información relevante para la composición del plan de la UAN, cruzando con la situación actual a través de una lista de verificación de la rutina de la UAN antes de la implementación e implementación del protocolo. Luego, se desarrollaron estrategias que siguieron 3 fases, a saber: Medidas individuales del equipo de manipuladores y de todos los que formaban parte de la UAN y que la atendían (personal del hospital y acompañantes de los pacientes); Adecuación y seguimiento del medio ambiente; Forma de preparar y distribuir los alimentos para orientar mejor la caracterización del protocolo. El plan de contingencia permitió observar los cambios necesarios en la UAN, demostrando efectividad en relación a la atención brindada en la unidad, a fin de minimizar los riesgos de contaminación por COVID-19, debido a la intensificación de las medidas de seguridad que se implementaron. Se concluye que la elaboración del plan fue fundamental en la UAN dada la situación actual, ya que es un ambiente con fácil probabilidad de contaminación por COVID-19, y es necesario garantizar la seguridad de todos, ya que el mantenimiento de la vida es de suma importancia.Com o avanço mundial da pandemia de Doença por Coronavírus 2019 (COVID-19), houveram necessidades de mudanças nos diferentes setores alimentares, de modo a impossibilitar a propagação deste vírus. O objetivo do trabalho foi a elaboração, implantação e implementação de um plano para o combate à COVID-19 em uma Unidade de Alimentação e Nutrição- UAN hospitalar em Sobral- CE. O plano foi elaborado seguindo inicialmente um levantamento das legislações e diretrizes elaboradas pelos órgãos competentes a fim de coletar informações relevantes para a composição do plano da UAN, fazendo cruzamento com a situação atual através de uma lista de verificação da rotina da UAN antes do protocolo ser implantado e implementado. Em seguida, foram elaboradas estratégias que seguiam 3 fases, sendo estas: Medidas individuais da equipe de manipuladores e todos que faziam parte da UAN e que frequentavam a mesma (funcionários do hospital e acompanhantes dos pacientes); Adequação e monitoramento do ambiente; Forma do preparo e distribuição dos alimentos para melhor conduzir a caracterização do protocolo. O plano de contingência possibilitou uma observância quanto às mudanças necessárias na UAN, demonstrando eficácia com relação aos cuidados assegurados na unidade, a fim de minimizar os riscos de contaminação da COVID-19, devido a intensificação de medidas de segurança que foi implementado.
