Detection of antibiotic waste in raw milk, pasteurized and Ultra High Temperature (UHT) commercialized in Unaí, Minas Gerais

Resumo: | Milk quality can be evaluated by physical-chemical, sensory, microbiological parameters and by the presence of chemical residues, such as antimicrobial. The main source of these substances in the milk is a consequence is the inadequate management of medications aimed at the control of illness in the herd, breach of the milk dispose during the grace period and flaws in utensils and equipment hygiene. The aim of this study is to evaluate raw-milk, pasteurizes and UHT milk quality commercialized in Unaí-MG under surveillance of inspection services or informally commercialized, in relation to the presence of antibiotic residues. 56 milk samples were analyzed, being 16 of raw-milk, 16 of pasteurized milk and 24 of UHT milk (8 sample of whole milk, 8 samples of semi-skimmed milk and 8 samples of skimmed milk) using the IDEXX SNAP® duo™ ST Plus kit. After the accomplishment of analytical tests, it was possible to verify that pasteurized and UHT samples did not contain antibiotic residues tested, while just one raw-milk sample presented positive for the presence of β-lactam residues. These results show the necessity of the compliance of grace period during the treatment of livestock as well as the necessity to control antimicrobial residues on the dairy industry reception platform beyond the surveillance by the Official Inspection Service aimed at the production of innocuous food. |

La principal fuente de estas sustancias en la leche es la consecuencia de una gestión inadecuada de los medicamentos destinados a controlar las enfermedades del rebaño, el incumplimiento en la eliminación de la leche durante el período de gracia y las fallas en la higiene de los utensilios y el equipo. Este estudio tenía por objeto evaluar la calidad de la leche cruda, pasteurizada y UHT vendida en el municipio de Unaí-MG bajo la supervisión de los servicios de inspección vendida de manera informal, en relación con la presencia de residuos de antibióticos. Se analizaron un total de 56 muestras de leche, 16 de las cuales eran leche cruda, 16 de leche entera pasteurizada y 24 muestras de leche UHT (8 muestras de leche entera, 8 de leche semidesnatada y 8 de leche desnatada) del kit IDEXX SNAP® duo™ ST Plus. Después de los ensayos analíticos fue posible verificar que las muestras de leche pasteurizada y UHT no contenían residuos de los antibióticos analizados, mientras que sólo una muestra de leche cruda dio positivo para residuos de β-lactámicos. Estos resultados indican la necesidad de cumplir con el período de gracia durante el tratamiento de los animales de producción, así como la necesidad de controlar los residuos antimicrobianos en las plataformas de recepción de las industrias lácteas, además de la inspección por parte del Servicio de Inspección Oficial destinada a la producción de alimentos inocuos.A qualidade do leite pode ser avaliada por parâmetros físico-químicos, sensoriais, microbiológicos e também pela presença de resíduos químicos, como os antimicrobianos. A principal fonte destas substâncias no leite é consequência do manejo inadequado de medicamentos visando o controle de enfermidades no rebanho, descumprimento no descarte de leite durante o período de carência e falhas na higienização de utensílios e equipamentos. Buscou-se neste estudo avaliar a qualidade do leite cru, pasteurizado e UHT comercializados no município de Unaí-MG sob fiscalização dos serviços de inspeção ou comercializados informalmente, quanto à presença de resíduos de antibióticos. Foram analisadas 56 amostras de leite, sendo 16 de leite cru, 16 de leite pasteurizado integral e 24 amostras de leite UHT (8 amostras de leite integral, 8 de semidesnatado e 8 amostras de leite desnatado) a partir do emprego do kit IDEXX SNAP® duo™ ST Plus. Após a realização dos ensaios analíticos foi possível verificar que as amostras de leite pasteurizado e UHT não continham resíduos dos antibióticos testados, enquanto apenas uma amostra de leite cru apresentou-se positiva para a presença de resíduos de β-lactâmicos.
