Verification of the physical-chemical and microbiological conditions of homemade cakes sold by street vendors

Resumo: The trade in food prepared and sold by street vendors in Brazil has grown significantly. However, this type of trade with their respective food products, can constitute a high risk to the health of consumers, since the people involved in these activities generally do not have a preparation for the proper handling of food and are unaware of the good practices of handling them. Given this, this study aimed to verify the physicochemical and microbiological conditions of homemade cakes sold by street vendors. For this, six cake samples were collected in the city of Codó-MA, obtained from random points. The cakes were analyzed for physical-chemical (moisture, lipids, proteins and ashes) and microbiological (total coliforms, coliforms at 45°C, Salmonella and fungi) parameters. The physicochemical aspects were as expected, except for the moisture that obtained a high content. Microbiological aspects showed that samples A and C are outside the standard defined by the legislation regarding the presence of coliforms at 45°C and Salmonella. Therefore, the consumption of these cakes poses a risk to the population and intervention measures must be taken.

Sin embargo, este tipo de comercio con sus respectivos productos alimenticios, puede constituir un alto riesgo para la salud de los consumidores, ya que las personas involucradas en estas actividades generalmente no cuentan con una preparación para el adecuado manejo de los alimentos y desconocen las buenas prácticas de manipulación de los mismos. Dado este, este estudio tuvo como objetivo verificar las condiciones fisicoquímicas y microbiológicas de los pasteles caseros vendidos por vendedores ambulantes. Para ello, se recolectaron seis muestras de tortas en ciudad de Codó/MA, obtenidas de puntos aleatorios. Se analizaron los pasteles para determinar los parámetros físico-químicos (humedad, lípidos, proteínas y cenizas) y microbiológicos (coliformes totales, coliformes a 45°C, Salmonella y hongos). Los aspectos fisicoquímicos fueron los esperados, excepto por la humedad que obtuvo un alto contenido. Los aspectos microbiológicos mostraron que las muestras A y C están fuera del estándar definido por la legislación con respecto a la presencia de coliformes a 45°C y Salmonella. Por lo tanto, el consumo de estos pasteles representa un riesgo para la población y se deben tomar medidas de intervención.O comércio de alimentos preparados e comercializados por vendedores ambulantes no Brasil tem crescido significantemente. Contudo, este tipo de comércio com seus respectivos produtos alimentícios, podem constituir um alto risco para a saúde dos consumidores, visto que as pessoas envolvidas nessas atividades geralmente não possuem um preparo para a manipulação adequada dos alimentos e desconhecem as boas práticas de manipulação dos mesmos. Diante disto, este estudo objetivou verificar as condições físico-químicas e microbiológicas de bolos caseiros comercializados por ambulantes. Para isso, foram coletadas seis amostras de bolos na cidade de Codó-MA, obtidas de pontos aleatórios. Os bolos foram analisados quantos aos parâmetros físico-químicos (umidade, lipídios, proteínas e cinzas) e microbiológicos (coliformes totais, coliformes à 45°C, Salmonella e fungos). Os aspectos físico-químicos apresentaram-se dentro do esperado, exceto a umidade que obteve um alto teor. Os aspectos microbiológicos mostraram que as amostras A e C estão fora do padrão definido pela legislação quanto à presença de coliformes a 45°C e Salmonella.
