Effects of the use of previous hydration and the region of production on the quality of canned carioca beans

Resumo: The objective of this work was to evaluate the technological quality and adaptability in the industrial processing of carioca bean cultivar ANfc9, from two producing regions. Physical parameters were evaluated in fresh beans and quality parameters in canned beans with and without prior hydration in industrial processing. Descriptive analysis was performed for the data obtained and, through analysis of variance, the effects of the place of production (Mato Grosso e Paraná) and type of process (with and without prior hydration) were evaluated. The industrial processing was carried out at Indústria e Conservas Oderich, in the municipality of Orizona -– GO, followed by the unit operations of the industrial plant. The highest levels of technological quality in the grains were from Cascavel-PR, the in natura grain is the most indicated process. The evaluated production sites did not significantly influence the quality of the industrially processed product.

Se evaluaron parámetros físicos en frijol fresco y parámetros de calidad en frijol enlatado con y sin hidratación previa en procesamiento industrial. Se realizó un análisis descriptivo de los datos obtenidos y, mediante análisis de varianza, se evaluaron los efectos del lugar de producción (Mato Grosso y Paraná) y tipo de proceso (con y sin hidratación previa). El procesamiento industrial se realizó en Indústria e Conservas Oderich, en el municipio de Orizona – GO, seguido de las operaciones unitarias de la planta industrial. Los mayores niveles de calidad tecnológica en los granos fueron de Cascavel-PR, siendo el grano in natura el proceso más indicado. Los sitios de producción evaluados no influyeron significativamente en la calidad del producto procesado industrialmente.O objetivo deste trabalho foi avaliar a qualidade tecnológica e adaptabilidade no processamento industrial do feijão, cultivar ANfc9, proveniente de duas regiões produtoras. Foram avaliados parâmetros físicos, no grão in natura e, parâmetros de qualidade no feijão enlatado com e sem hidratação prévia no processamento industrial. Para os dados obtidos foi realizada análise descritiva e por meio de análise de variância avaliaram-se os efeitos do local de produção (Mato Grosso e Paraná) e tipo de processo (com e sem hidratação prévia). O processamento industrial foi realizado na Indústria e Conservas Oderich, no município de Orizona – GO, seguindo-se as operações unitárias da planta industrial. Os maiores índices de qualidade tecnológica nos grãos foram verificados para os grãos produzidos na região de Cascavel – PR. O processo industrial com o grão in natura é o processo mais indicado para essa cultivar.
