Hygienic-sanitary conditions in units producing meals: a review

Resumo: In addition to dietary standards, a Meal Production Unit (UPR) must adjust hygienic standards in order to meet the needs and ensure the integrity of the health of its guests, thus preventing the appearance of outbreaks of Foodborne Diseases. The objective of this study was to carry out an integrative review seeking the classification and adequacy of UPRs, with the purpose of analyzing the strategies used for the management of hygienic-sanitary quality. The search for the articles was based on the analysis of data from scientific publications, in a period from 2012 to 2019. Bringing as results information referring to the classification of hygienic-sanitary conditions in UPRs and their conformity indexes. As already strongly emphasized in the literature and in good practice manuals, food safety is an eminent concern in which there can be no flaws and should always be updated, as in all stages of food processing and handling, there are possibilities of contamination. and with that, possible pathologies.

El objetivo de este estudio fue realizar una revisión integradora buscando la clasificación y adecuación de las UPR, con el propósito de analizar las estrategias utilizadas para la gestión de la calidad higiénico-sanitaria. La búsqueda de los artículos se basó en el análisis de datos de publicaciones científicas, en un período de 2012 a 2019. Traer como resultado información referente a la clasificación de las condiciones higiénico-sanitarias en las UPR y sus índices de conformidad. Como ya se ha enfatizado fuertemente en la literatura y en los manuales de buenas prácticas, la seguridad alimentaria es una preocupación eminente en la que no puede haber fallas y siempre debe estar actualizada, ya que en todas las etapas del procesamiento y manipulación de alimentos, existen posibilidades de contaminación. y con eso, posibles patologías.Além dos padrões dietéticos, uma Unidade Produtora de Refeições (UPR) deve ajustar os padrões higiênicos, afim de atender às necessidades e garantir a integridade da saúde de seus comensais, evitando assim, o surgimento de surtos de Doenças Transmitidas por Alimentos. O objetivo desse estudo foi realizar uma revisão integrativa buscando a classificação e adequação das UPRs, com o propósito de analisar as estratégias utilizadas para a gestão da qualidade higiênico-sanitária. A busca pelos artigos foi baseada na análise de dados de publicações científicas, em um período compreendido entre 2012 a 2019. Trazendo como resultados informações referentes a classificação das condições higiênico-sanitárias em UPRs e seus índices de conformidades.
