Microbiological analysis of manipulators and handling surfaces of public schools

Resumo: | Contaminated foodborne diseases are mainly caused by the lack of proper sanitation of food handlers as well as the surfaces on which they are handled. The objective was to perform the microbiological analysis of the hands of manipulators and manipulation surfaces in schools of a municipality of Maranhão. Microbiological analyzes were performed on the hands of ten food handlers and five handling surfaces. Total and thermotolerant coliform counts were determined using the Most Probable Number Multiple Tubes method. It was verified that only one manipulator did not present contamination by the microorganisms studied, and in relation to the handling surfaces all presented contamination. Therefore, it was verified that in the evaluated schools all presented deficiencies in the process of hygiene of the hands and the surfaces. |

Se tuvo por objetivo realizar el análisis microbiológico de las manos de manipuladores y superficies de manipulación en escuelas de un municipio de Maranhão. Se realizaron análisis microbiológicos de las manos de diez manipuladores de alimentos y cinco superficies de manipulación. Se realizaron las determinaciones del conteo de coliformes totales y termotolerantes, por medio del método de Tubos Múltiples en Número Más Probable. Se verificó que sólo un manipulador no presentó contaminación por los microorganismos estudiados, y en relación a las superficies de manipulación todas presentaron contaminación. Por lo tanto se verificó que en las escuelas evaluadas todas presentaron fallas en el proceso de higienización de las manos y de las superficies.As doenças transmitidas por alimentos contaminados são ocasionadas principalmente pela falta de higienização adequada das mãos dos manipuladores dos alimentos bem como das superfícies em que estes produtos são manipulados. Teve por objetivo realizar a análise microbiológica das mãos de manipuladores e superfícies de manipulação em escolas de um município do Maranhão. Foram realizadas análises microbiológicas das mãos de dez manipuladores de alimentos e cinco superfícies de manipulação. Foram feitas as determinações da contagem de coliformes totais e termotolerantes, por meio do método de Tubos Múltiplos em Número Mais Provável. Verificou-se que somente um manipulador não apresentou contaminação pelos micro-organismos estudados, e em relação as superfícies de manipulação todas apresentaram contaminação. Portanto verificou-se que nas escolas avaliadas todas apresentaram falhas no processo de higienização das mãos e das superfícies.
