Resumo: | Objective: to analyze samples of vegetables Lactuca sativa (lettuce), Allium schoenoprasum (chives), Coriandrum sativum (coriander) and Eruca sativa (arugula) sold in supermarkets and open markets in the municipality of Piripiri- Piaui, as well as to evaluate the effectiveness of the method of washing food using 2% sodium hypochlorite. Methodology: Parasitological analysis was carried out at the Parasitology Laboratory of Cristo Faculdade do Piaui, using the spontaneous sedimentation method of Hoffman, Pons and Janer adapted for parasitological evaluation in food. Results: Of the 96 samples analyzed, 93.75% demonstrated the presence of some parasitic structure. And the effectiveness of food hygiene using 2% sodium hypochlorite was seen. Conclusion: it is necessary to carry out health education practices for producers, traders and consumers regarding health risks. |

Metodología: El análisis parasitológico se realizó en el Laboratorio de Parasitología del Cristo Faculdade do Piauí, utilizando el método de sedimentación espontánea de Hoffman, Pons y Janer adaptado para la evaluación parasitológica en alimentos. Resultados: De las 96 muestras analizadas, el 93.75% demostró la presencia de alguna estructura parasitaria. Y se observó la efectividad de la higiene de los alimentos con hipoclorito de sodio al 2%. Conclusión: es necesario llevar a cabo prácticas de educación en salud para productores, comerciantes y consumidores con respecto a los riesgos para la salud.Objetivo: analisar amostras de hortaliças Lactuca sativa (alface), Allium schoenoprasum (cebolinha), Coriandrum sativum (coentro) e Eruca sativa (rúcula) comercializadas em supermercados e feira livre no município de Piripiri- Piauí, bem como avaliar a eficácia do método de lavagem de alimentos utilizando hipoclorito de sódio a 2%. Metodologia: A análise parasitológica foi realizada no Laboratório de Parasitologia da Cristo Faculdade do Piauí, através do método de sedimentação espontânea de Hoffman, Pons e Janer adaptado para avaliação parasitológica em alimentos. Resultados: Das 96 amostras analisadas, 93,75% demonstraram a presença de alguma estrutura parasitária. E foi visto a eficácia da higienização de alimentos utilizando hipoclorito de sódio a 2%.
