Consumption of fruits and vegetables by students of a federal educational institution during the Covid-19 pandemic

Resumo: Fruits and vegetables (FLV) are sources of vitamins, minerals and fiber. Its frequent consumption can help maintain health, physical and emotional well-being, in addition to contributing to the economy and even the environment. Despite the possible benefits related to its intake, in addition to the easy access to information about the importance of a healthy diet to increase the quality of life, it is noted that the consumption of FLV is still low, in disagreement with the recommendations of the Organization of Health (WHO) and the Ministry of Health (MOH). During the pandemic, this situation worsened, with the consumption of FLV reduced, in many cases, being replaced by ultra-processed foods. There are several reasons for the low consumption of FV, such as the scarcity of financial resources, lack of consumption habits, limited availability and problems related to access. Thus, the research aimed to evaluate the consumption of FLV during the COVID-19 pandemic by students from the Federal Institute of Education, Science and Technology of Pernambuco (IFPE) Campus Cabo de Santo Agostinho (CCSA). A bibliographic research was carried out on FLV, changes in the pattern of food consumption during the pandemic and the benefits of daily FLV intake. From this, a virtual questionnaire was created (via Google Forms) to describe the eating habits of CCSA students with regard to FLV consumption during the pandemic, which was answered by a total of 102 students. From the answers, it was noticed that only 18.15% of respondents consume FLV every day, which demonstrates that FLV consumption during the pandemic proved to be insufficient, in disagreement with the parameters of the WHO and the MS. It was also possible to perceive that some important indicators to promote a change in the consumption of FV by the interviewees would be the reduction of prices and a process of food reeducation, in the sense of inserting the FLV daily in the diet of the interviewees.

Su consumo frecuente puede ayudar a mantener la salud, el bienestar físico y emocional, además de contribuir a la economía e incluso al medio ambiente. A pesar de los posibles beneficios relacionados con su ingesta, además del fácil acceso a la información sobre la importancia de una dieta saludable para aumentar la calidad de vida, se advierte que el consumo de FLV aún es bajo, en desacuerdo con las recomendaciones de la Organización Mundial de la Salud (OMS) y el Ministerio de Salud (MOH). Durante la pandemia esta situación empeoró, reduciéndose el consumo de FLV, siendo sustituido en muchos casos por alimentos ultraprocesados. Las razones del bajo consumo de FV son varias, como la escasez de recursos financieros, la falta de hábitos de consumo, la disponibilidad limitada y los problemas relacionados con el acceso. Así, la investigación tuvo como objetivo evaluar el consumo de FLV durante la pandemia de la COVID-19 por parte de los estudiantes del Instituto Federal de Educación, Ciencia y Tecnología de Pernambuco (IFPE) Campus Cabo de Santo Agostinho (CCSA). Se realizó una búsqueda bibliográfica sobre FLV, cambios en el patrón de consumo de alimentos durante la pandemia y los beneficios de la ingesta diaria de FLV. A partir de esto, se elaboró ​​un cuestionario virtual (vía Google Forms) para describir los hábitos alimentarios de los estudiantes de la CCSA en relación al consumo de FLV durante la pandemia, el cual fue respondido por un total de 102 estudiantes. A partir de las respuestas, se percibió que solo el 18,15% de los encuestados consume FLV todos los días, lo que demuestra que el consumo de FLV durante la pandemia resultó ser insuficiente, en desacuerdo con los parámetros de la OMS y el MS. También fue posible percibir que algunos indicadores importantes para promover un cambio en el consumo de FV por los entrevistados serían la reducción de precios y un proceso de reeducación alimentaria, en el sentido de insertar el FLV diariamente en la dieta de los entrevistados.Frutas, legumes e verduras (FLV) são fontes de vitaminas, minerais e fibras. Apesar dos possíveis benefícios relacionados a sua ingestão, além da facilidade de acesso à informação sobre a importância de uma alimentação saudável para o aumento da qualidade de vida, nota-se que o consumo de FLV ainda é baixo, em desacordo com as recomendações da Organização Mundial de Saúde (OMS) e do Ministério da Saúde (MS). Durante a pandemia, houve um agravamento desta situação, observando-se, em muitos casos, a substituição de FLV por alimentos ultraprocessados. Foi realizado uma pesquisa bibliográfica sobre FLV, mudanças no padrão de consumo de alimentos durante a pandemia e os benefícios da ingestão cotidiana de FLV. A partir disso, elaborou-se um questionário virtual (via Google Forms) para descrever os hábitos alimentares dos alunos do CCSA no que se refere ao consumo de FLV durante a pandemia, que foi respondido por um total de 102 alunos. A partir das respostas, percebeu-se que apenas 18,15% dos entrevistados consomem FLV todos os dias, o que demonstra que o consumo de FLV durante a pandemia mostrou-se insuficiente, em desacordo com os parâmetros da OMS e do MS.
