Maturation curve of jaboticaba ‘Sabará’

Resumo: Knowing the stages of fruit development is essential to determine cultural management practices and to know the commercial harvesting point of the fruits. However, the objective of this work is to study the evolution of the development processes of jaboticaba, still linked to the cultivated plant in the city of Piracicaba-SP. For this, 10 jaboticaba tree were selected from August to October 2016 and 2017. Ten fruits of each plant were measured with a pachymeter, totaling 100 fruits, to determine the longitudinal and transverse diameters during maturation, every five days. Fifty fruits were also collected for physical-chemical analysis of color, mean mass, total soluble solids content (SST) and titratable total acidity (ATT) during the development to compose the curve of fruit maturation, which were evaluated every five days. The data were submitted to analysis of variance to compare the two harvests evaluated and also to compare the different evaluated periods. The parameters that presented significant difference were adjusted to the regression equation and for the significant parameters that did not fit the regression, the Tukey test was performed at 5% of probability. The transverse diameter of the fruits was higher in the 2016 harvest when compared to the 2017 harvest, and for the other evaluated parameters there was no significant difference between the harvests. Changes in fruit diameters occurred until the end of the evaluated period and adjusted to an increasing linear model, however, maximum average mass gain was adjusted to the quadratic polynomial model, presenting maximum value at 35 days after the anthesis, stabilizing the from then on. The total soluble solids content and the titratable total acidity were adjusted to the linear model from increasing to first and decreasing to second. Increase in the ratio values (SST/ATT) along the development of the fruits suggests the best time to harvest them. The change in the color of the bark occurs 30 days after the anthesis and is not a good indicator of harvest point. Under the conditions of the study, 'Sabará' jaboticabas, harvested 45 days after anthesis have ideal quality both for the fresh fruit market and for processing.

Este trabajo tuvo como objetivo evaluar las características físicas y químicas de 'Sabará' jabuticaba, a lo largo de su desarrollo hasta la maduración, en plantas cultivadas en la ciudad de Piracicaba, SP, Brasil. Se seleccionaron 10 árboles de jabuticaba, cuyos frutos se evaluaron de agosto a octubre de 2016 y 2017. Los diámetros longitudinales y transversales se evaluaron en 10 frutos por planta, totalizando 100 frutos, medidos con un calibrador a intervalos de cinco días, de 10 a 45 días después de la antesis. Se evaluaron otras 50 frutas para determinar el color de la piel, la masa promedio, el contenido total de sólidos solubles (TSS), la acidez titulable total (ATT) y la proporción, también cada cinco días, de 20 a 45 días después de la antesis. Los datos se sometieron a análisis de varianza y los parámetros que mostraron una diferencia significativa se ajustaron a la ecuación de regresión, mientras que aquellos en los que las ecuaciones de regresión no se ajustaron se les aplicó la prueba de Tukey con una probabilidad del 5%.  El diámetro transversal de los frutos fue mayor en la cosecha de 2016 en comparación con la cosecha de 2017 y, para los otros parámetros evaluados, no hubo diferencias significativas entre las cosechas. Los cambios en los diámetros de la fruta ocurrieron hasta el final del período evaluado y se ajustaron a un modelo lineal en crecimiento, sin embargo, la ganancia de masa promedio máxima se ajustó al modelo polinomial cuadrático, presentando un valor máximo a los 35 días después de la antesis, estabilizándose a partir de entonces. El contenido de TSS y la acidez titulable total se ajustó a un modelo lineal de forma creciente para el primero y decreciente para el segundo, respectivamente. El punto de cosecha de la 'Sabará' jaboticaba debe estar asociado no solo con el cambio en el color de la corteza que ocurre 30 días después de la antesis, sino también con el aumento en los valores de la relación. Bajo las condiciones del estudio, los jabuticabas 'Sabará', cosechados 45 días después de la antesis, tienen una calidad ideal tanto para el mercado de fruta fresca como para el procesamiento.Conhecer as fases de desenvolvimento do fruto é essencial para determinar práticas culturais de manejo e conhecer o ponto de colheita comercial dos mesmos. Este trabalho objetivou avaliar as características físicas e químicas de jabuticabas ‘Sabará’, durante todo seu desenvolvimento até a maturação, em plantas cultivadas no município de Piracicaba, SP, Brasil. Foram selecionadas 10 jabuticabeiras, cujos frutos foram avaliados no período de agosto a outubro dos anos de 2016 e 2017, respectivamente. Os diâmetros longitudinal e transversal foram avaliados em 10 frutos por planta, totalizando 100 frutos, medidos com paquímetro em intervalos de cinco dias, dos 10 aos 45 dias após a antese. Outros 50 frutos foram avaliados quanto a coloração da casca, massa média, teor de sólidos solúveis totais (SST), acidez total titulável (ATT) e ratio, também a cada cinco dias, dos 20 aos 45 dias após a antese. Os dados foram submetidos a análise de variância e os parâmetros que apresentaram diferença significativa foram ajustados a equação de regressão, enquanto aqueles que naqueles em que não se ajustaram equações de regressão, realizou-se o teste de Tukey a 5% de probabilidade. O diâmetro transversal dos frutos foi maior na safra de 2016 quando comparado a safra de 2017 e, para os demais parâmetros avaliados não houve diferença significativa entre as safras. Alterações nos diâmetros do fruto ocorreram até o final do período avaliado e se ajustaram a um modelo linear crescente, no entanto, ganho máximo de massa média ajustou-se ao modelo polinomial quadrática, apresentando valor máximo aos 35 dias após a antese, se estabilizando a partir de então. O teor de sólidos solúveis totais e acidez total titulável ajustaram-se a um modelo linear de maneira crescente para o primeiro e decrescente para o segundo, respectivamente. O ponto de colheita da jabuticaba ‘Sabará’ deve ser associar não só a mudança da cor da casca que ocorre aos 30 dias após a antese, como também o aumento dos valores de ratio. Nas condições do estudo, jabuticabas ‘Sabará’, colhidas 45 dias após a antese apresentam qualidade ideal tanto para o mercado de frutas frescas, como para processamento.
