Coating with lycopene dye present in tomatoes as an alternative food supplementation

Resumo: Lycopene is a carotenoid, a substance that gives tomatoes and other vegetables their red color, which stands out for being one of the most powerful antioxidants observed in research. It is also known as one of the best biological suppressors of free radicals, especially those derived from oxygen. This may be associated with a reduced risk of chronic diseases such as cardiovascular diseases and cancer, especially prostate and breast cancer, when adopting a diet based on tomatoes and derivatives rich in lycopene. In view of the above, the main objective of this research was to carry out a literature review on tomato microencapsulation and lycopene retention in different processes. With this study, a bibliographical survey was carried out between 2017 and 2023 of studies related to meta-analyses of lycopene microencapsulation. 27 review articles were found, three were eliminated after reading the abstract and 24 did not speak directly. It was verified that the objective of the work was fulfilled, considering that values considered relevant in the retention of this carotenoid after microencapsulation were presented, which makes its application a possible suggestion for better human nutrition.

También es conocido como uno de los mejores supresores biológicos de los radicales libres, especialmente los derivados del oxígeno. Esto puede estar asociado a una reducción del riesgo de enfermedades crónicas como enfermedades cardiovasculares y cáncer, especialmente de próstata y de mama, al adoptar una dieta a base de tomates y derivados ricos en licopeno. En vista de lo anterior, el objetivo principal de esta investigación fue realizar una revisión de la literatura sobre la microencapsulación del tomate y la retención de licopeno en diferentes procesos. Con este estudio se realizó un levantamiento bibliográfico entre 2017 y 2023 de estudios relacionados con metanálisis de microencapsulación de licopeno. Se encontraron 27 artículos de revisión, tres fueron eliminados luego de la lectura del resumen y 24 no hablaban directamente. Se verificó que se cumplió con el objetivo del trabajo, considerando que se presentaron valores considerados relevantes en la retención de este carotenoide luego de la microencapsulación, lo que hace que su aplicación sea una posible sugerencia para una mejor nutrición humana.O licopeno é um carotenoide, substância que confere ao tomate e a outros vegetais a coloração vermelha, que se destaca por ser um dos antioxidantes mais potentes observados em pesquisas. Ele também é conhecido como um dos melhores supressores biológicos de radicais livres, especialmente aqueles derivados do oxigênio. Isto pode estar associado à diminuição do risco de doenças crônicas como as cardiovasculares e câncer, principalmente o de próstata e o de mama, quando adotada uma dieta a base de tomate e derivados ricos em licopeno. Diante do exposto, a presente pesquisa teve como principal objetivo realizar uma revisão bibliográfica sobre a microencapsulação do tomate e a retenção de licopeno nos diferentes processos. Foi realizado com esse estudo um levantamento bibliográfico entre 2017 e 2023 de estudos relacionados a meta-analises da microencapsulação do licopeno. Foram encontrados 27 artigos de revisão, três foram eliminados após leitura de resumo e 24 não falavam diretamente.
