Resumo: | Objective: To evaluate the hygienic-sanitary conditions of a Food and Nutrition Unit (UAN). Methodology: Cross-sectional, descriptive and quantitative study carried out in august 2021 at the UAN located in Picos-PI using the checklist of RDC nº 275 of October 21, 2002 from the Ministry of Health. Results: The compliance percentages of five topics were identified: 1) Buildings and installations with 79.74%, being considered the main problems in walls and ceilings; 2) Equipment, furniture and utensils with 100%, as it is a relevant point for preparing meals and functioning; 3) Handlers with 92.85%, identifying only the absence of hand washing posters; 4) Production and transportation of food with 66.66%, due to not carrying out labeling and transportation operations; 5) Documentation with 100% compliance. Conclusion: The analyzed UAN has a satisfactory hygienic-sanitary panorama and the checklist is a widely used tool, due to its degree of confidence and practicality. |

Metodología: Estudio transversal, descriptivo y cuantitativo realizado en agosto de 2021 en la UAN ubicada en Picos-PI utilizando la lista de verificación de RDC nº 275 del 21 de octubre de 2002 del Ministerio de Salud. Resultados: Se identificaron los porcentajes de cumplimiento de cinco temas: 1) Edificios e instalaciones con 79.74%, siendo considerados los principales problemas en paredes y techos; 2) Equipos, muebles y utensilios al 100%, ya que es un punto relevante para la preparación de comidas y funcionamiento; 3) Manejadores con 92.85%, identificando solo la ausencia de carteles de lavado de manos; 4) Producción y transporte de alimentos con 66.66%, por no realizar operaciones de etiquetado y transporte; 5) Documentación con 100% de cumplimiento. Conclusión: La UAN analizada tiene un panorama higiénico-sanitario satisfactorio y la lista de verificación es una herramienta ampliamente utilizada, debido a su grado de confianza y practicidad.Objetivo: Avaliar as condições higiênico-sanitárias de uma Unidade de Alimentação e Nutrição (UAN) Metodologia: Estudo transversal, descritivo e quantitativo realizado em agosto de 2021 na UAN localizada em Picos-PI utilizando o checklist da RDC nº 275 de 21 de outubro de 2002 do Ministério da Saúde. Resultados: Foram identificados os percentuais de conformidade de cincos tópicos: 1)Edificações e Instalações com 79,74%, sendo considerados principais problemas em paredes e teto; 2)Equipamentos, móveis e utensílios com 100%, visto ser um ponto relevante para elaboração de refeições e ao funcionamento; 3)Manipuladores com 92,85%, identificando apenas a ausência de cartazes para lavagem das mãos; 4)Produção e transporte de alimentos com 66,66%, devido não realização de operações de rotulagem e transporte; 5)Documentação com 100% de conformidade.
