Physicochemical characterization of Oenocarpus distichus Mart. from different sites in Pará, Brazil

Resumo: | Oenocarpus distichus Mart. is a native Amazonian palm tree with great socioeconomic potential for the pulp. However, fruit production is still dependent on extractivism and the information available on the nutritional composition of the pulp is still scarce, constituting limiting factors to its knowledge. In this work, 41 samples of pulp from three locations in Pará were analyzed for pH, total titratable acidity, total soluble solids, moisture, ash, fiber, protein and lipids. The data were analyzed using univariate and multivariate analysis. The pulps showed significant differences among them for the nine characteristics, forming by the mean comparison test eight (TSS) to sixteen (lipids, carbohydrates and others) distinct groups. By cluster analysis, the pulps were separated into seven different groups. Group 1 had the highest fiber (18.14%) and carbohydrate (46.98%) contents, Group 2 had the highest values for TCA (1.05%), TSS (2.53 °Brix) and ash (3.11%), and Group 4 had the highest content of lipids (71.99%). The significant variation among the pulps of this species from the same locality can be attributed to environmental (fruit ripening stage, post-harvest handling, etc.) and genetic factors. O. distichus pulps from different locations in the state of Pará, Brazil, have different composition, forming several distinct groups. The divergence in these pulps is higher within than among localities. In general, bacaba pulp has high nutritional value for being rich in lipids, carbohydrates and proteins, being an excellent source of fiber. |

Sin embargo, su producción sigue dependiendo del extractivismo y la información sobre la composición nutricional de la pulpa es todavía escasa, lo que constituye factor limitante. Se analizaron 41 muestras de pulpa de tres localidades de Pará para el pH, la acidez total titulable, los sólidos solubles totales, la humedad, la ceniza, la fibra, la proteína y los lípidos. Los datos fueron analizados por uni y multivariante. Las pulpas mostraron diferencias significativas para las nueve características, formando por la comparación de medias entre ocho (SST) y dieciséis (lípidos, carbohidratos y otros) grupos. Mediante un análisis de cluster, las pulpas se separaron en siete grupos: el Grupo 1 tuve los niveles más altos de fibra (18,14%) y carbohidratos (46,98%), el Grupo 2 los valores más altos de TCA (1,05%), TSS (2,53 °Brix) y cenizas (3,11%), y el Grupo 4 el contenido más alto de lípidos (71,99%). La importante variación entre las pulpas de esta especie procedentes de la misma localidad puede atribuirse a factores ambientales (maduración del fruto, manipulación pos cosecha, entre otros) y genéticos. La pulpa de O. distichus de diferentes localidades del Pará puede presentar diferencias en su composición centesimal, formando varios grupos distintos. La divergencia en estas pulpas es mayor dentro de las localidades. En general, la pulpa de esta palma tiene un alto valor nutricional por ser rica en lípidos, carbohidratos y proteínas, siendo una excelente fuente de fibra.Oenocarpus distichus Mart. é uma palmeira nativa da amazônica com grande potencial socioeconômico para a polpa. No entanto, a produção de frutos ainda é dependente do extrativismo e as informações disponíveis quanto à composição nutricional da polpa ainda são escassas, constituindo fatores limitantes ao seu conhecimento. Neste trabalho, foram analisadas 41 amostras de polpa de três localidades do Pará quanto ao pH, acidez total titulável, sólidos solúveis totais, umidade, cinzas, fibras, proteínas e lipídeos. Os dados foram tratados por análises uni e multivariadas. As polpas apresentaram diferenças significativas entre si para as nove características, formando pelo teste de comparação de médias de oito (SST) a dezesseis (lipídeos, carboidratos e outros) grupos distintos. Pela análise de agrupamentos as polpas foram separadas em sete grupos diferentes. O grupo 1 apresentou os maiores teores de fibras (18,14%) e carboidratos (46,98%), grupo 2 teve os maiores valores para ATT (1,05%), SST (2,53 °Brix) e cinzas (3,11%) e o grupo 4 o maior teor de lipídeos (71,99%). A variação significativa entre as polpas dessa espécie da mesma localidade pode ser atribuída a fatores ambientais (estádio de maturação dos frutos, manuseio pós-colheita entre outros) e aos genéticos. Podendo-se considerar que polpas de O. distichus provenientes de diferentes localidades do Pará apresentam diferenças na sua composição centesimal, formando vários grupos distintos. A divergência nessas polpas é maior dentro que entre as localidades.
