Quality of cassava flours sold at open markets in the City of Codó state of Maranhão, Brazil

Resumo: Cassava has a fundamental role for human consumption, mainly in the form of flour, and is part of the daily meals of the population in the North and Northeast of the country. Due to its high consumption in the state of Maranhão, the present study aimed to evaluate the quality of cassava flours sold in open markets in the city of Codó state of Maranhão, Brazil. Analyzes of dirt and foreign materials, counting molds and yeasts were carried out, with subsequent verification of the presence of fungi of the genera Aspergillus and Penicillium and physical-chemical analyzes in 17 samples of cassava flour. The data obtained were subjected to analysis of variance and the means compared using the Tukey test being p> 0.05. In the results of the search for dirt and foreign materials, all samples showed physical contaminants, being in disagreement with the legislation. In the mold and yeast count, 58.82% of the samples had a high count. As for the presence of the genera of fungi, Aspergillus was identified in 100% of the samples and the Penicillium genus in 41.17%. In the physical-chemical analysis, most flours obtained moisture contents within those established by IN nº 52/2011, in the ash parameter, only the F16 sample was not in conformity, in the acidity parameter, high and low acidity flours were obtained. It was concluded that the samples were non-compliant with the presence of physical and microbiological contaminants, being a possible risk to consumers' health. The physical-chemical characteristics were mostly satisfactory, as the percentages were within the standards established by legislationIncluir o resumo em inglês.

En vista de su alto consumo en el estado de Maranhão, el presente estudio tuvo como objetivo evaluar la calidad de las harinas de yuca que se venden en los mercados abiertos en la ciudad de Codó estado de Maranhão, Brasil. Se realizaron análisis de suciedad y materiales extraños, recuento de mohos y levaduras, con posterior verificación de la presencia de hongos de los géneros Aspergillus y Penicillium y análisis físico-químicos en 17 muestras de harina de yuca. . Los datos obtenidos se sometieron a análisis de varianza y se compararon las medias mediante la prueba de Tukey con p> 0.05. En los resultados de la búsqueda de suciedad y materiales extraños, todas las muestras mostraron contaminantes físicos, estando en desacuerdo con la legislación. En el recuento de mohos y levaduras, el 58,82% de las muestras tenían un recuento alto. Como la presencia d los géneros de hongos, 100% de las muestras se identificó a partir de la Aspergillus y 41,17% del género Penicillium. En los análisis físico-químicos, la mayoría las harinas obtuvieron contenidos de humedad dentro de los establecidos por la IN nº 52/2011, en el parámetro cenizas, solo la muestra F16 no fue conforme, en el parámetro de acidez se obtuvieron harinas altas y bajas en ácido. Se concluyó que las muestras no cumplían con la presencia de contaminantes físicos y microbiológicos, siendo un posible riesgo para la salud de los consumidores.  La mayoría de las características físicas y químicas fueron satisfactorias, ya que los porcentajes estuvieron dentro de los estándares establecidos por la legislación.A mandioca tem papel fundamental para a alimentação humana, principalmente na forma de farinhas, e faz parte das refeições diárias da população no Norte e Nordeste do país. Em virtude do seu grande consumo no estado do Maranhão o presente trabalho objetivou avaliar a qualidade das farinhas de mandioca comercializadas em feiras livres da cidade de Codó estado do Maranhão, Brasil. Realizou-se as análises de sujidades e materiais estranhos, contagem de bolores e leveduras, com posterior verificação da presença de fungos dos gêneros Aspergillus e Penicillium e análises físico-químicas em 17 amostras de farinhas de mandioca. Os dados obtidos foram submetidos à análise de variância e as médias comparadas através do teste de Tukey sendo p>0,05. Nos resultados da pesquisa de sujidades e materiais estranhos, todas as amostras apresentaram contaminantes físicos, estando em desacordo com a legislação. Na contagem de bolores e leveduras, 58,82% das amostras apresentaram uma elevada contagem. Quanto a presença dos gêneros de fungos, em 100% das amostras foi identificado o Aspergillus e em 41,17% o gênero Penicillium. Nas análises físico-químicas, a maioria das farinhas obtiveram teores de umidade dentro dos estabelecidos pela IN nº 52/2011, no parâmetro cinzas, apenas a amostra F16 esteve em desconformidade, no parâmetro acidez, obteve-se farinhas de alta e baixa acidez.
