Evaluation of chemical composition and inhibition potential of fusel oil against different microorganisms

Resumo: The control of contamination in the fermentation process is essential to ensure productivity. To minimize the load of contaminants, acid treatment and the addition of antibiotics are carried out. However, in the ethanol production process itself, other alcohols are formed that result in a mixture known as fusel oil that can be used to minimize contamination. Thus, this study aims to analyze fusel oil samples, characterize and evaluate the inhibition potential of this substance against different microorganisms. Initially, a bibliographic survey was carried out to identify the biomass and understand the stages of formation of fusel oil. Concomitantly, samples of fusel oil were analyzed with respect to physical-chemical parameters and chemical composition. The inhibition potential of fusel oil was evaluated with the inhibition halo test using the yeasts Catanduva-1 (Cat-1) and FT-858 and the bacteria Salmonella tiffi (ATCC 14028), Escherichia coli (ATCC 25922), Stafilicoccus aureus (ATCC 25923) and Bacillus sp. The production of fusel oil is directly related to yeast metabolism. The samples showed differences in physical-chemical parameters and both had a high content of isoamyl alcohol. The bacteria showed sensitivity to fusel oil demonstrating that this by-product can be used as an antiseptic and antibacterial agent.

Para minimizar la carga de contaminantes, se lleva a cabo el tratamiento con ácido y la adición de antibióticos. Sin embargo, en el proceso de producción de etanol en sí, se forman otros alcoholes que dan como resultado una mezcla conocida como aceite de fusel que puede usarse para minimizar la contaminación. Por lo tanto, este estudio tiene como objetivo analizar muestras de aceite de fusel, caracterizar y evaluar el potencial de inhibición de esta sustancia contra diferentes microorganismos. Inicialmente, se realizó una encuesta bibliográfica para identificar la biomasa y comprender las etapas de formación del aceite de fusel. Al mismo tiempo, se analizaron muestras de aceite de fusel con respecto a los parámetros físico-químicos y la composición química. El potencial de inhibición del aceite de fusel se evaluó con la prueba de halo de inhibición utilizando las levaduras Catanduva-1 (Cat-1) y FT-858 y la bacteria Salmonella tiffi (ATCC 14028), Escherichia coli (ATCC 25922), Stafilicoccus aureus (ATCC 25923) y Bacillus sp. La producción de aceite de fusel está directamente relacionada con el metabolismo de la levadura. Las muestras mostraron diferencias en los parámetros físico-químicos y ambas tenían un alto contenido de alcohol isoamílico. La bacteria mostró sensibilidad al aceite de fusel, lo que demuestra que este subproducto puede usarse como agente antiséptico y antibacteriano.O controle da contaminação no processo fermentativo é fundamental para garantir a produtividade. Para minimizar a carga de contaminantes são feitos o tratamento ácido e a adição de antibióticos.  Entretanto, no próprio processo de produção de etanol, são formados outros álcoois que resultam em uma mistura conhecida como óleo fúsel que pode ser empregado para minimizar a contaminação. Assim, este estudo visa analisar amostras de óleo fúsel, caracterizar e avaliar o potencial de inibição desta substãncia frente a diferentes microrganismos. Inicialmente, foi realizado um levantamento bibliográfico para identificar as biomassas e compreender as etapas de formação do óleo fúsel.  Concomitantemente, foram analisadas amostras de óleo fúsel com relação aos parâmetros físico-químicos e a composição química. O potencial de inibição do óleo fúsel foi avaliada com o teste do halo de inibição utilizando as leveduras Catanduva-1 (Cat-1) e FT-858 e as bactérias Salmonella tiffi (ATCC 14028), Escherichia coli (ATCC 25922), Stafilicoccus aureus (ATCC 25923) e Bacillus sp. A produção de óleo fúsel está diretamente relacionada com o metabolismo das leveduras. As amostras apresentaram diferenças nos parâmetros físico-químicos e ambas apresentaram alto teor de álcool isoamilico.
