Development of Soft Drink with Addition of Baccharis dracunculifolia Extract: Physicochemical and Antioxidant Analyzes

Resumo: Consumption of soft drinks has increased in recent decades, and is associated with increased prevalence of obesity, weight gain and diabetes. Studies show a direct relationship between diet and health which, added to the growing interest of some individuals in consuming healthier foods, has increased the interest of the food industry in developing new products. Rosemary (Baccharis dracunculifolia) is known to have a diversity of phenolic compounds. Among the effects of the use of B. dracunculifolia already observed in the literature, we can mention a drop in fasting capillary blood glucose levels and protection from damage to organs such as the liver, kidneys and pancreas. When added to foods, their antioxidant compounds are able to delay the formation of oxidative products, maintain the nutritional quality of the food and increase its shelf life. The present work carried out chemical and antioxidant analysis of an orange soft drink with the addition of B. dracunculifolia extract. Under the conditions of this work, high levels of total phenolic compounds (515.1µg Eq GAE/g) and high free radical scavenging capacity ABTS (12356.6 µM trolox/g) and DPPH (0.851 µM trolox/g) were obtained in addition to a high iron III reducing antioxidant power (18354 µM ferrous sulfate/g). The orange soft drink enriched with extract of B. dracunculifolia developed in this work showed antioxidant power even in its lowest concentrations.

Los estudios muestran una relación directa entre dieta y salud que, sumado al creciente interés de algunas personas por consumir alimentos más saludables, ha incrementado el interés de la industria alimentaria por desarrollar nuevos productos. Se sabe que el romero de campo (Baccharis dracunculifolia) tiene una diversidad de compuestos fenólicos. Entre los efectos del uso de B. dracunculifolia ya observados en la literatura, podemos mencionar la disminución de los niveles de glucosa en sangre capilar en ayunas y la protección del daño a órganos como el hígado, los riñones y el páncreas. Cuando se añaden a los alimentos, sus compuestos antioxidantes son capaces de retrasar la formación de productos oxidativos, mantener la calidad nutricional del alimento y aumentar su vida útil. El presente trabajo realizó el análisis químico y antioxidante de un refresco de naranja con la adición de extracto de B. dracunculifolia. Bajo las condiciones de este trabajo se obtuvieron altos niveles de compuestos fenólicos totales (515.1µg Eq Eq GAE/g) y alta capacidad de captación de radicales libres ABTS (12356.6 µM trolox/g) y DPPH (0.851 µM trolox/g), además a un alto poder antioxidante reductor de hierro III (18354 µM sulfato ferroso/g). Lo refresco de naranja enriquecida con extracto de B. dracunculifolia desarrollada en este trabajo mostró poder antioxidante incluso en sus concentraciones más bajas.O consumo de refrigerantes tem aumentado nas últimas décadas, e está associado ao aumento da prevalência de obesidade, ganho de peso e diabetes. Estudos mostram uma relação direta entre dieta e saúde que, somados ao crescente interesse de alguns indivíduos em consumir alimentos mais saudáveis, tem elevado o interesse da indústria alimentícia em desenvolver novos produtos. O alecrim do campo (Baccharis dracunculifolia) é conhecido por possuir uma diversidade de compostos fenólicos. Dentre os efeitos do uso de B. dracunculifolia já observados na literatura, pode-se citar queda dos níveis de glicemia capilar de jejum e proteção de danos em órgãos, como fígado, rins e pâncreas. Quando adicionados aos alimentos, seus compostos antioxidantes são capazes de retardar a formação de produtos oxidativos, manter a qualidade nutricional do alimento e aumentar o seu prazo de validade. O presente trabalho realizou análises químicas e de propriedades antioxidantes de um refrigerante de laranja com a adição de extrato de B. dracunculifolia. Sob as condições deste trabalho, foram obtidos altos teores de compostos fenólicos totais (515,1µg Eq GAE/g) e alta capacidade de eliminação de radicais livres ABTS (12356,6 µM trolox/g) e DPPH (0,851 µM trolox/g), além de um elevado poder antioxidante redutor de ferro III (18354 µM sulfato ferroso/g).
