Resumo: The brewing industries generate large amounts of barley residues (RM), which can be used as animal feed. However, the high moisture of RM can lead to losses due to mold or fermentation. In this context, solar drying can be an advantageous operation, as it will favor storage and transportation, while it keeps the waste nutritional quality. Thus, the aim of this work was to study the drying of RM using two equipments: a solar greenhouse and a fixed bed solar dryer. Initially, a study of the drying kinetics was performed at different temperatures, obtaining the Page model as the one that best represents the RM drying kinetics. In the solar drying tests, it was possible to determine the influence of factors such as solar radiation and wind speed on the temperatures obtained, as well as on the drying rate in both equipments. Computational fluid dynamics analysis of the fixed bed dryer showed the best way to feed air into the dryer, which favors drying. However, the solar greenhouse proved to be more efficient, promoting a more homogeneous drying of the material.

Sin embargo, la alta humedad del residuo puede provocar pérdidas de material debido al moho o la fermentación. En este contexto, el secado solar puede ser una operación ventajosa, ya que facilitará el almacenamiento y el transporte, al tiempo que conservará la calidad nutricional de los desechos. Por lo tanto, el objetivo de este trabajo fue estudiar el secado de RM utilizando dos equipos: invernadero solar y secador solar de lecho fijo. Inicialmente, se realizó un estudio de la cinética de secado del material a diferentes temperaturas, obteniendo el modelo de Page como el que mejor representa la cinética de secado del RM. En las pruebas de secado solar, fue posible determinar la influencia de factores como la radiación solar y la velocidad del viento en las temperaturas obtenidas, así como en la velocidad de secado en ambos equipos. El análisis de dinámica de fluidos computacional del secador de lecho fijo mostró la mejor manera de alimentar aire al secador, lo que favorece el secado. Sin embargo, el invernadero solar demostró ser más eficiente, promoviendo un secado más homogéneo del material.As indústrias cervejeiras geram grande quantidade de resíduos de malte (RM), que podem ser empregados como ração animal. No entanto, a alta umidade do resíduo pode implicar em perdas do material devido à mofo ou fermentação. Nesse contexto, a secagem solar pode ser uma operação vantajosa, pois irá facilitar o armazenamento e transporte, conservando também a qualidade nutricional do resíduo. Assim, o objetivo deste trabalho foi estudar a secagem do RM empregando dois equipamentos: estufa solar e secador solar de leito fixo. Inicialmente, foi realizado um estudo da cinética de secagem do material em diferentes temperaturas, obtendo-se o modelo de Page como o que melhor representa a cinética de secagem do RM. Nos testes de secagem solar, foi possível determinar a influência de fatores como a radiação solar e velocidade do vento sobre as temperaturas obtidas, bem como sobre a taxa de secagem em ambos os equipamentos. Análises de fluidodinâmica computacional do secador de leito fixo mostraram a melhor forma de alimentação do ar dentro do secador, que favorece a secagem.
