Application of the theory of constraints - TOC in the planning of capacity and mix of accommodation units in hotel businesses

Resumo: Hotel management in Brazil is undergoing changes with the arrival of major international chains, bringing with them more efficient management processes, which are creating problems of survival for more traditional hotels. To face these challenges, some hotel organizations seek to improve their own operating processes, by adapting to capacity, improving productivity and consequently, minimizing costs. It is within this context that the central theme of this work is developed: applying the Theory of Constraints to the capacity planning process and mix of accommodation units in hotel businesses. The Theory of Constraints – TOC is based on the systematic management of capacity of the process of executing services, eliminating excess and adjusting it, to better serve guests’ needs. Therefore, the methodology used to achieve the objective of this article is descriptive research, by means of a bibliographic and documentary review procedures, and qualitative in terms of its approach. The results obtained indicate that the system has great potential for use in hotel businesses, as it enables the capacity to be better planned, and the mix of accommodation units to be defined, identifying and eliminating of the constraints associated with the process. Para enfrentar estos desafios algunas organizaciones hoteleras tratan de perfeccionar sus procesos operacionales, con adecuación de la capacidad, mejora de la productividad y, en consecuencia, minimización de los costos. Es en este sentido que se desarrolla el tema central de este trabajo: aplicar la Teoría de las Restricciones en el proceso de planeamiento de la capacidad y del mix de unidades habitacionales en empresas hoteleras. La Teoría de las Restricciones – TOC se basa en el gerenciamiento sistémico de la capacidad del proceso de ejecución de los servicios, eliminando los excesos y ajustándolo en el atendimiento de lãs necesidades de los huéspedes. Por lo tanto, la metodología utilizada para alcanzar el objetivo de este artículo es la investigación descriptiva, conducida a través de revisión bibliográfica y documental en relación a los procedimientos y cualitativa en relación al abordaje. Los resultados obtenidos indican preliminarmente que el sistema tiene gran potencial en empresas hoteleras, al permitir el planeamiento de la capacidad, la definición del mix de unidades habitacionales y la identificación y la eliminación de las restricciones del proceso. Palabras-clave: Planeamiento; Teoría de las Restricciones; Hotelería.A hotelaria no Brasil passa por mudanças com a vinda de grandes redes internacionais, com processos de gestão eficientes que causam nos hotéis mais tradicionais problemas de sobrevivência. Para enfrentar estes desafios algumas organizações hoteleiras buscam aperfeiçoar seus processos operacionais, com adequação da capacidade, melhora da produtividade e, conseqüentemente, minimização dos custos. É neste sentido que se desenvolve o tema central deste trabalho: aplicar a Teoria das Restrições no processo de planejamento da capacidade e do mix de unidades habitacionais em empresas hoteleiras. A Teoria das Restrições – TOC baseia-se no gerenciamento sistêmico da capacidade do processo de execução dos serviços, eliminando os excessos e ajustando-o no atendimento das necessidades dos hóspedes. Portanto, a metodologia utilizada para atingir o objetivo deste artigo é a pesquisa descritiva, conduzido através de revisão bibliográfica e documental quanto aos procedimentos e qualitativa quanto à abordagem. Os resultados obtidos indicam preliminarmente que o sistema tem grande potencial em empresas hoteleiras, ao permitir o planejamento da capacidade, a definição do mix de unidades habitacionais e a identificação e a eliminação das restrições do processo.
