Resumo: The avocado is a climacteric fruit that presents high respiratory rate and high ethylene production after the crop, what results in an highly perishable under environmental conditions. The aim of this work was to verify the effect of gamma radiation on the avocado ripening 'Hass'. The gamma radiation amount were of 0,2; 0,4; 0;6 and 0,8 kGy, characterizing 4 treatments, and other witness that was not submitted to the radiation. The irradiation source was 60Co. The fruits were analyzed by 35 days (0, 7, 14, 21, 28 and 35 days). A group of fruits characterized the destructive samples, us which out accomplished pH analyses, titrable acidity, soluble solids (oBrix), sugar reducer and ratio. In another group, the control, was evaluated the weight loss and respiratory rate. In all of the treatments 03 repetitions were used and the experimental unit consisted of 03 fruits for every day of analysis in the destructive group and 6 fruits in the group control. The different treatments form maintained under refrigeration to the temperature of ± 10ºC and 90±5% of UR. The refrigeration was effective in the maintenance of the conservation of the fruits of avocado Hass variety. Analyze them that more demonstrated the differences among the treatments were the weigth loss, respiratory rate and texture. The doses of 0,2 and 0,6 KGy demonstrated to be the most effective in the conservation of the fruits.

O objetivo desta pesquisa foi verificar o efeito da radiação gama sobre o amadurecimento de abacate ‘Hass’. As doses de irradiação gama foram de 0,2; 0,4; 0;6 e 0,8 kGy, caracterizando 4 tratamentos, e outro testemunha que não foi submetido à radiação. A fonte de irradiação foi 60Co. Os frutos foram analisados por 35 dias (0, 7, 14, 21, 28 e 35 dias). Um grupo de frutos caracterizou as amostras destrutivas, nos quais fora realizadas análises de pH, acidez titilável, sólidos solúveis (brix), açúcar redutor e ratio. Em outro grupo, o controle, avaliou‐se a perda de massa e taxa respiratória. Em todos os tratamentos foram utilizadas 03 repetições e a unidade experimental constou de 03 frutos para cada dia de análise no grupo destrutivo e 6 frutos no grupo controle. Os diferentes tratamentos foram mantidos sob refrigeração à temperatura de ±10ºC e 90±5% de UR. A refrigeração foi efetiva na manutenção da conservação dos frutos de abacate da variedade Hass. As análises que mais demonstraram as diferenças entre os tratamentos foram a perda de massa, respiração e textura.
