Resumo: A study was carried out to evaluate the digestibility of protein sources for poultries in the initial phase from 14 to 21 days, using the protease enzyme. The digestibility experiment was carried out in a completely randomized design, in a factorial scheme (3x2) +1, with three sources of protein foods, called test foods - meat and bone meal from two suppliers and soybean meal x two levels of inclusion of protease enzyme - with and without inclusion and the reference diet to determine the digestibility of the standard diet, totaling seven treatments and four repetitions of 5 poultries each, totaling 140 poultries. The treatments used for the digestibility test were: T1 - Reference Ration 100%; T2 - 60% Reference ration + 40% Test Food Soybean meal; T3 - 60% R. reference + 40% Al. Test Soybean meal + enzyme; T4 - 60% R. reference + 40% Al. Test + meat meal 1 (FCOB1); T5 - 60% R. reference + 40% Al. Test + meat meal 1 (FCOB1) + enzyme; T6 - 60% R. reference + 40% Al. Test + meat meal 2 (FCOB2); T7 - 60% R. reference + 40% Al. Test + meat meal 2 (FCOB2) + enzyme. The poultries were housed in batteries adapted for the metabolism test, where the supply of water and feed was free, the feed was provided three times a day to avoid losses and possible contamination of the excrete in the trays. The reference ration had its formulation based on corn and soybean meal, without the inclusion of oil, in order to meet the nutritional requirements for the breeding phase and the composition of the ingredients was determined in the unit's bromatology laboratory. To determine the digestibility coefficient and estimate the equations to estimate the metabolizable energy, the methodology of total excrete collection was used, after determining the Weende values of the reference ration, test foods and excrete, the digestibility coefficients of crude protein, ether extract and dry matter using the formula described in the literature and the data were subjected to analysis of variance and when a significant effect of the factors was obtained, the means were compared by the SNK test at 5% probability, using the statistician program SISVAR.

O experimento de digestibilidade, foi realizado em delineamento inteiramente casualizado, em um esquema fatorial (3x2) +1, sendo três fontes de alimentos proteicos, denominados de alimentes testes – farinha de carne e ossos de dois fornecedores e farelo de soja x dois níveis de inclusão de enzima protease – com e sem inclusão e a ração referência para determinar a digestibilidade da ração padrão, totalizando sete tratamentos e quatro repetições de 5 aves cada, totalizando 140 aves. Os tratamentos utilizados para o ensaio de digestibilidade foram: T1 – Ração Referência 100%; T2 – 60% Ração referência + 40% Alimento Teste Farelo de soja; T3 – 60% R. referência + 40% Al. Teste Farelo de soja + enzima; T4 – 60% R. referência + 40% Al. Teste + farinha de carne 1 (FCOB1); T5 – 60% R. referência + 40% Al. Teste + farinha de carne 1 (FCOB1) + enzima; T6 – 60% R. referência + 40% Al. Teste + farinha de carne 2 (FCOB2); T7 – 60% R. referência + 40% Al. Teste + farinha de carne 2 (FCOB2) + enzima. As aves foram alojadas em baterias adaptadas para o ensaio de metabolismo, onde o fornecimento de água e ração foi à vontade, a ração foi fornecida três vezes ao dia para evitar perdas e possível contaminação das excretas nas bandejas. A ração referência teve sua formulação a base de milho e farelo de soja, sem inclusão de óleo, a fim de atender as exigências nutricionais para a fase de criação e a composição dos ingredientes foi determinada no laboratório de bromatologia da unidade.
