Resumo: | The effect of replacing corn by alternative energy ingredients on carcass characteristics, leg tissue composition and meat quality of sheep Santa Ines, were studied in two experiments, both performed in the Laboratory Evaluation of Food with Small Ruminants II, Department of Animal Science of Universidade Federal Rural de Pernambuco. In each experiment were used 40 non castrated male sheep, that were slaughtered after 70 days of confinement. In experiment 1, the corn was replaced by Manipueira in 0; 25; 50; 75 and 100%. In experiment 2, the corn was replaced by corn germ meal in 0; 25; 50; 75 e 100%. When manipueira replaced corn there was a quadratic effect on intake of dry matter and total digestible nutrients, while the crude protein intake, body weight at slaughter, carcass weights, yields hot housing and commercial area and eye-loin decreased linearly. The loss by cooling increased linearly according to the replacement. The weights of all meat cuts decreased linearly, however the yield of the same has not been changed. There was a linear decrease to the rump width and carcass and leg compactness index. The weights of the tissue components of the leg decreased with the replacement as well as the percentage of muscles, the muscle:bone ratio and muscularity leg index. The percentage of bones increased linearly according to the replacement. The moisture content of meat increased, while the crude protein and ether extract decreased linearly. There was a quadratic effect for shear force with minimum force of 2.78 kg / cm ² when manipueira replaced corn at 54.25%. There was a quadratic effect for C15:0 (0.37 estimate when replacement was 46.25%) and C17:0 (1.30 estimate when replacement was 68.50%), a linear increase for C18: 0 and decrease for C22:0. About the monounsaturated fatty acids, the C14:1 and C20:1 n9 decreased, while the C18:1 n11 increased linearly. For C15: 1 observed a quadratic effect, with an estimate of 1.48 when the replacement was 26.75%. For polyunsaturated fatty acids, there was a quadratic effect for C18: 2 9c 11t, with estimated maximum of 0.60 when replacement was 36.66%. Relations polyunsaturated:saturated and ω6:ω3 decreased linearly with the substitution. In experiment 2, the intakes of dry matter, crude protein and total digestible nutrients decreased linearly with the substitution, as well as the carcass weights and yields, longissimus muscle area, weights of commercial cuts and tissue components of the leg. There was an increase in the final pH of carcass, without effect on the initial pH and the initial and final temperatures. The yield of meat cuts, the percentage of muscle and fat of leg and muscle:fat ratio were not affected by the replacement. The percentage of bones and other tissues of the leg increased linearly. The relations muscle:bone, subcutaneous fat:intermuscular fat and muscularity leg index decreased linearly with the replacement. There was no influence on the chemical composition and physico-chemical parameters of meat, except the water holding capacity, which increased linearly with the replacement. There was no effect on total saturated fatty acids (SFA), but there was a linear decrease for total monounsaturated fatty acids and linear increase in the total polyunsaturated fatty acids (PUFA). Relations PUFA:SFA and ω-6: ω-3 increased with the replacement. |

Relations PUFA:SFA and ω-6: ω-3 increased with the replacement.Objetivando-se avaliar o efeito da substituição do milho por ingredientes energéticos alternativos sobre as características de carcaça, composição tecidual da perna e qualidade da carne de ovinos da raça Santa Inês, foram conduzidos dois experimentos, ambos realizados no Laboratório de Avaliação de Alimentos com Pequenos Ruminantes II do Departamento de Zootecnia da Universidade Federal Rural de Pernambuco. Foram utilizados, em cada experimento, 40 ovinos machos não emasculados, os quais foram abatidos após 70 dias de confinamento. No experimento 1, substituiu-se o milho pela manipueira em 0; 25; 50; 75 e 100%. No experimento 2, o milho foi substituído pelo gérmen integral de milho em 0; 25; 50; 75 e 100%. Quando a manipueira substituiu o milho verificou-se efeito quadrático para os consumos de matéria seca e nutrientes digestíveis totais, enquanto o consumo de proteína bruta, o peso corporal ao abate, os pesos de carcaça, os rendimentos de carcaça quente e comercial e a área de olho-de-lombo decresceram linearmente. A perda por resfriamento aumentou linearmente de acordo com a substituição. Os pesos de todos os cortes cárneos diminuíram linearmente, entretanto os rendimentos dos mesmos não foram alterados. Verificou-se decréscimo linear para a largura da garupa e índices de compacidade da perna e da carcaça. Os pesos dos componentes tissulares da perna decresceram linearmente com a substituição, assim como o percentual de músculos, a relação músculo:osso e o índice de musculosidade da perna. O percentual de ossos aumentou linearmente com a substituição. O teor de umidade da carne aumentou, enquanto os teores de proteína bruta e extrato etéreo decresceram linearmente. Verificou-se efeito quadrático para força de cisalhamento, com força mínima estimada em 2,78 kg/cm² quando a manipueira substituiu o milho em 54,25%. Verificou-se efeito quadrático para o C15:0 (estimativa de 0,37 quando a substituição foi de 46,25%) e C17:0 (estimativa de 1,30 quando a substituição foi de 68,50%), aumento linear para o C18:0 e decréscimo para o C22:0. Em relação aos ácidos graxos monoinsaturados, o C14:1 e C20:1 n9 diminuíram, enquanto o C18:1 n11 aumentou linearmente. Para o C15:1 observou-se efeito quadrático, com estimativa de 1,48, quando substituiu-se 26,75% do milho pela manipueira. Para ácidos graxos poli-insaturados, verificou-se efeito quadrático para o C18:2 9c 11t, com valor máximo estimado em 0,60 quando a substituição foi de 36,66%. As relações poli-insaturado:saturado e ω6:ω3 diminuíram linearmente com a substituição. No experimento 2, o consumo de matéria seca, proteína bruta e nutrientes digestíveis totais diminuíram linearmente com a substituição do milho pelo gérmen integral de milho, bem como os pesos e rendimentos de carcaça, área de olho-de-lombo, pesos dos cortes cárneos comerciais e componentes tissulares da perna. Houve aumento para o pH final da carcaça, sem efeito sobre o pH inicial e temperaturas inicial e final. O rendimento dos cortes cárneos, os percentuais de músculos e de gordura da perna e a relação músculo:gordura não foram influenciados pela substituição. Os percentuais de ossos e de outros tecidos da perna aumentaram linearmente. As relações musculo:osso, gordura subcutânea:gordura intermuscular e o índice de musculosidade da perna decresceram linearmente com a substituição. Não houve influência sobre a composição química e parâmetros físico-químicos da carne, com exceção da capacidade de retenção de água, que aumentou linearmente com a substituição. Não houve efeito sobre o total de ácidos graxos saturados (AGS), mas verificou-se redução linear para o total de ácidos graxos monoinsaturados e aumento linear para o total de ácidos graxos poli-insaturados (AGP). There was no effect on total saturated fatty acids (SFA), but there was a linear decrease for total monounsaturated fatty acids and linear increase in the total polyunsaturated fatty acids (PUFA). Relations PUFA:SFA and ω-6: ω-3 increased with the replacement. |
