Resumo: | The occurrence and spread of bacterial resistance (RAM) has been identified as a public health problem, and one of the main ways of spreading these resistant bacteria is the lack of hygienic-sanitary practices in the food storage processing environment. The aim of the present work was to produce chitosan microparticles containing trans-cinnamaldehyde with bioactivity in the inhibition of Staphylococcus aureus MRSA. Chitosan microparticles containing trans-cinnamaldehyde were prepared using the simple coacervation technique, using 5% (w / v) chitosan as the wall material and vanillin as the crosslinking material. The characterization was performed in terms of encapsulation efficiency, average microparticle diameter, polydispersity index, zeta potential, morphology through MEV and optical microscopy. The antibacterial analysis of the particles against Staphylococcus aureus MRSA was performed using a broth microdilution technique, determining the Minimum Inhibitory Concentration (MIC). The microparticles had an average diameter of 1.92 ± 0.005 mm, a PDI of 0.39 ± 0.2, a surface load of 20.61 ± 0.8 mV, an encapsulation efficiency of 93.81% and a shape spherical and wrinkled. The antibacterial activity tests showed that the chitosan microparticles containing the trans-cinnamaldehyde showed antibacterial activity for strains of S.aureus ATCC (6538) as well as for strains S. aureus MRSA, obtaining lower MIC values than those obtained for treatments with free oil and empty microparticles. Thus, chitosan microparticles containing trans-cinnamaldehyde may be a promising alternative for controlling the multiplication and dissemination of methicillin-sensitive and resistant S. aureus (MSSA and MRSA). |

O objetivo do presente trabalho foi produzir micropartículas de quitosana contendo trans-cinamaldeído com bioatividade na inibição de Staphylococcus aureus MRSA. As micropartículas de quitosana contendo trans-cinamaldeído foram preparadas por meio da técnica de coacervação simples, utilizando como material de parede a quitosana 5% (p/v) e a vanilina como material reticulante. A caracterização foi realizada em termos de eficiência de encapsulação, diâmetro médio das micropartículas, índice de polidispersão, potencial zeta, morfologia através de MEV e microscopia ótica. A análise antibacteriana das partículas contra Staphylococcus aureus MRSA foi realizada por meio de técnica de microdiluição em caldo, determinando-se a Concentração Inibitória Mínima (CIM). As micropartículas apresentaram diâmetro médio de 1,92 ± 0, 005 mm, PDI de 0,39 ± 0,2, uma carga de superfície de 20,61 ± 0,8 mV, eficiência de encapsulação de 93,81% e um formato esférico e enrugado. Os ensaios da atividade antibacteriana mostraram que as micropartículas de quitosana contendo o trans-cinamaldeído apresentaram atividade antibacteriana para cepas de S.aureus ATCC (6538) como também para cepas S. aureus MRSA, obtendo-se valores de CIM menores do que os obtidos para os tratamentos com o óleo livre e com as micropartículas vazias.
