Resumo: Environmental sustainability, according to Agenda 21 aims to reduce environmental pressures, depletion of natural resources and pollution. The objective of this work was to elaborate a tool to evaluate the sustainability of restaurants, limited by the geographic space of the Pedra Branca City, in the context of the environmental dimension. Through an exploratory-descriptive qualitative research methodology, this work sought to create the tool with environmental indicators aiming at a sustainable management of the food residues and resources used.
