Age of sweet potato tubers, and quality of flour

Resumo: Sweet potato (Ipomoea batatas (L) Lam.) flours were produced and analised with five sub-varieties of porphyrorhiza, harvested at the third, fourth, and fifth month of age. The chemical composition of the flours was studied and compared. It was observed an increase in total protein at the fourth month for four varieties and a decrease as the fifth month, except for the Sub-variety "Roxa Talo Fino". The aminogram of two flours showed the presence of 17 aminoacids, nine of them being essential. There was no variation in the yield of starch considering the age of tubers. Total sugar increased at the fifth month, except for "Rosa". Preliminary teat of conservation of the flour in sealed plastic bags showed a satisfactory shelf life up to seven months. The fourth month showed to be the best for sweet potato harvest.

The fourth month showed to be the best for sweet potato harvest.Foram produzidas e analisadas farinhas de batata-doce (Ipomoea batatas (L) Lam.) utilizando-se cinco subvariedades de batata-doce Roxa (Roxa Talo Grosso, Roxa Talo Fino, Roxa Precoce, Rosa e Rosa Estriada), colhidas aos três, quatro e cinco meses após o plantio. Estabeleceram-se comparações quanto aos teores de umidade, proteína bruta, acidez, fibra, extrato etéreo, amido, cinzas e açúcares totais, em relação à época da colheita das subvariedades consideradas. Foi verificada uma elevação no teor de proteína bruta no quarto mês, seguindo-se um decréscimo no quinto mês, exceto na subvariedade Roxa Talo Fino. O teor de amido manteve-se uniforme em relação às épocas de colheita dos tubérculos. Os açúcares apresentaram aumento no quinto mês, exceto na Rosa. Testes preliminares de conservação dessas farinhas indicaram possibilidade de armazenamento em saco plástico por um período de sete meses. O aminograma de duas farinhas, escolhidas entre as de maior teor protéico, revelou a presença de 17 aminoácidos, nove dos quais, essenciais.
