Resumo: Brazilian history refers to coffee's presence as one of the essential products in the Brazilian economy moving billions of dollars to this date in the internal and external market. This research seeks to highlight coffees' s origins and history briefly. The methodology employed in this present article was a qualitative study, more precisely by bibliographic research consummated through governmental sites, reliable research institutions, and articles indexed in scientific journals.  This article will be addressing the main influentials factors in the definition of the quality of the coffee, analyzing this commodity market performance,  and concluding with the main elements which noticeably culminates in the existing difference of the product, regarding the quality of the grain consumed in the internal and external market.
