Resumo: The concepts of modernity and postmodernity are argued in two gastronomics situations, in the cities of Rio de Janeiro at the end of the XIX century and Recife in the middle of the XX century. The main objective of the argument is to center on the importance of both concepts in the organizational studies under the theoretical critical perspective.
