Resumo: Esta dissertação explora as influências históricas e contemporâneas da indústria alimentar, dos meios de comunicação social e das intervenções regulamentares nas percepções e escolhas dos consumidores. O trabalho enfatiza o papel das Comunicações de Nutrição e Saudabilidade (NHC) e da Rotulagem Nutricional na Frente da Embalagem (FoPNL) na formação da compreensão do consumidor. O estudo destaca os desafios colocados pelas informações enganosas nas embalagens e na publicidade, necessitando de regulamentações governamentais para garantir uma comunicação precisa dos alimentos. No centro da análise está o efeito halo de saudabilidade, onde uma única informação, como o NHC, influencia as percepções gerais do produto. A pesquisa reconhece a agência do consumidor na tomada de decisões e investiga processos cognitivos, como a dissonância cognitiva, que afetam as escolhas. Dividida em três artigos, a dissertação analisa sistematicamente o impacto do NHC nas percepções do consumidor, explora a relação entre o efeito halo de saúde do NHC e a dissonância cognitiva e testa as limitações do NHC e do FoPNL nos produtos alimentares, fornecendo informações valiosas sobre a dinâmica dos alimentos.

O trabalho enfatiza o papel das Comunicações de Nutrição e Saudabilidade (NHC) e da Rotulagem Nutricional na Frente da Embalagem (FoPNL) na formação da compreensão do consumidor. O estudo destaca os desafios colocados pelas informações enganosas nas embalagens e na publicidade, necessitando de regulamentações governamentais para garantir uma comunicação precisa dos alimentos. No centro da análise está o efeito halo de saudabilidade, onde uma única informação, como o NHC, influencia as percepções gerais do produto. A pesquisa reconhece a agência do consumidor na tomada de decisões e investiga processos cognitivos, como a dissonância cognitiva, que afetam as escolhas. Dividida em três artigos, a dissertação analisa sistematicamente o impacto do NHC nas percepções do consumidor, explora a relação entre o efeito halo de saúde do NHC e a dissonância cognitiva e testa as limitações do NHC e do FoPNL nos produtos alimentares, fornecendo informações valiosas sobre a dinâmica dos alimentos.
