Carí´s Quality at fairs in the city of Petrolina-PE

Resumo: The region of Sertão in the State of Pernambuco (Brazil) has great potential for the development of fishing and aquaculture, considering the presence of the São Francisco River and sun, both fundamental elements for fish growth. Among the fish species present in the region, Rhinelepis aspera or “Carí” (Siluriformes, Loricariidae) may be targeted, considering the taste of its meat. The aim of the present study was to study the physical and chemical parameters of fresh “Carí” meat according to the standards developed by the Adolfo Lutz Institute and to estimate its freshness using the H2S production test. The fish used in this study were purchased from the main fish markets of the City of Petrolina (Pernambuco State, Brazil) and had been caught in the Sobradinho Lake (State of Bahia), 30 km from the city. The fish were chosen for their appearance and freshness. The fish were filleted to calculate the yield percentage and were prepared for further analyses. According to our results, “Carí” filets have 11% protein, 0.63% lipids, and 0.89 water activity. Some samples showed a positive H2S test, indicating initial stages of degradation. The results of this study suggest that the fish “Carí” has suitable characteristics for consumption; however, the storage conditions were inadequate in the study area.

Entre as espécies presentes nesta região, pode-se destacar o Rhinelepis aspera, (Siluriformes, Loricariidae) conhecido como Carí e apreciado por sua carne saborosa. O presente trabalho teve como objetivo avaliar os parâmetros físico-químicos do Carí fresco, conforme as Normas Analíticas do Instituto Adolfo Lutz, e avaliar o grau de conservação do produto através do teste de produção de H2S. Os peixes, objeto do estudo, foram coletados nas principais feiras livres de Petrolina - PE, porém tinham sido capturados no lago de Sobradinho - BA, a 30 km da cidade. No mercado foram escolhidos os indivíduos que apresentavam as melhores características de frescor. Os peixes foram filetados, calculando o percentual de rendimento desta operação e, em seguida, preparado para as análises. Conforme os nossos resultados, o Carí possui 11,10% de proteína, 0,63% de lipídio e 0,89 de atividade de água. Alguns exemplares tiveram reação positiva ao H2S indicando um início do processo de degradação.
