Resumo: This work aimed to evaluate good manufacturing practices and the physical facilities of a Meal Producing Plant (UPR), located in the southern area of the city of São Paulo, which produces an average of 1000 meals/day. Conformities and unconformities were determined through application of the "Roadmap for inspection of good practices in commercial food establishments and food services" of the Health Surveillance Center State Ordinance, CVS/2013. It was possible to identify several unconformity issues and the necessity to adjust both the physical plant and determination of routines and processes in meal production.

It was possible to identify several unconformity issues and the necessity to adjust both the physical plant and determination of routines and processes in meal production. Este trabalho teve como objetivo avaliar as Boas Práticas de Fabricação e estrutura fí­sica de uma Unidade Produtora de Refeições (UPR) situada na zona sul, da cidade de São Paulo, SP, que produzia em média 1000 refeições/dia, identificando conformidades e não-conformidades através da aplicação do Roteiro de Inspeção das Boas Práticas em estabelecimentos comercias de alimentos e de serviços de alimentação da Portaria Estadual, CVS/2013, do Centro de Vigilância Sanitária. O resultado demonstrou diversos pontos não conformes.
