Hygienic-sanitary diagnosis and corrective measures in the processing of cassava flour

Resumo: | During cassava processing and obtaining its derivatives, the occurrence of critical factors that can compromise the quality and safety of the food is observed. Thus, the objective was to carry out the hygienic-sanitary diagnosis of a flour mill and propose improvements through the elaboration of an action plan. For this, the Good Manufacturing Practices checklist was applied, with modifications, and the sanitary panorama was elaborated through the adequacy percentage calculation. The action plan was prepared with recommendations for improvements to the establishment. Based on the checklist, the project was classified in group 3, as it presented 22.03% of compliance with the items. Block 5 (documentation) and block 3 (manipulators) had the lowest levels of compliance. The action plan elaborated mainly includes modifications related to the infrastructure of the production site, training of handlers and documentation of the project. Thus, the implementation of the suggested improvements and adoption of Good Manufacturing Practices during the processing of cassava flour will promote adequate conditions for manufacturing, providing a quality product and, therefore, safe for consumption. |

Así, el objetivo era realizar el diagnóstico higiénico-sanitario de un molino harinero y proponer mejoras mediante la elaboración de un plan de acción. Para ello se aplicó el checklist de Buenas Prácticas de Manufactura, con modificaciones, y se elaboró el panorama sanitario mediante el cálculo del porcentaje de adecuación. El plan de acción se preparó con recomendaciones para mejorar el establecimiento. Con base en la lista de verificación, el proyecto se clasificó en el grupo 3, ya que presentó un 22,03% de cumplimiento de los ítems. El bloque 5 (documentación) y el bloque 3 (manipuladores) tuvieron los niveles más bajos de cumplimiento. El plan de acción elaborado incluye principalmente modificaciones relacionadas con la infraestructura del sitio de producción, capacitación de manipuladores y documentación del proyecto. Así, la implementación de las mejoras sugeridas y la adopción de Buenas Prácticas de Manufactura durante el procesamiento de la harina de yuca promoverá condiciones adecuadas para la fabricación, brindando un producto de calidad y, por ende, seguro para el consumo.Durante o beneficiamento da mandioca e obtenção de seus derivados, observa-se a ocorrência de fatores críticos que podem comprometer a qualidade e segurança do alimento. Dessa forma, objetivou-se realizar o diagnóstico higiênico-sanitário de uma casa de farinha e propor melhorias por meio da elaboração de um plano de ação. Para isso foi aplicado um check-list de Boas Práticas de Fabricação, com modificações, e elaborado o panorama sanitário por meio do cálculo de porcentagem de adequação. Foi elaborado o plano de ação com recomendações de melhorias ao estabelecimento. Com base no check-list, o empreendimento foi classificado no grupo 3, pois apresentou 22,03% de atendimento dos itens. O bloco 5 (documentação) e o bloco 3 (manipuladores), apresentaram os menores níveis de conformidades. No plano de ação elaborado constam, principalmente, modificações relacionadas a infraestrutura do local de produção, capacitação dos manipuladores e documentação do empreendimento.
