CONSUMPTION OF ULTRAPROCESSED FOODS AMONG WORKERS: A CROSS-SECTIONAL STUDY

Resumo: This study seeks to evaluate the regular consumption of ultra-processed foods among workers. This is a cross-sectional study with a representative sample from a University in the city of Criciúma, state of Santa Catarina, Brazil. A questionnaire including demographic, socioeconomic and behavioral information was applied. The outcome variable “consumption of ultra-processed foods” was evaluated by the consumption, in the week before the interview, of at least one of the following food groups: sweets, soft drinks or artificial juice. Regular consumption was defined by the frequency of consumption of at least five days a week. The association between the outcome and the demographic and socioeconomic variables studied was assessed using the Chi-square test, with a 5% significance level. In total, 214 workers were interviewed, of which one third reported regular consumption of ultra-processed foods (33.6%, 95% CI 27.3-40.0). Regular consumption of soft drinks and artificial juice was reported by about 15%, whereas a higher percentage was found among those that consumed sweets regularly (22.9%). It was not evidenced an association between the consumption of ultra-processed foods and the variables gender, age, marital status and education. Considering the high prevalence of regular consumption of ultra-processed foods, this study shows the need to develop interventions and/or health promotion programs conducted in the workplace and aimed at changes in food behavior.

Este es un estudio transversal realizado con una muestra representativa de empleados de la Universidad de Criciúma, Santa Catarina (Brasil). Se aplicó un cuestionario que incluye información demográfica, socioeconómica y de comportamiento. La variable “consumo de alimentos ultraprocesados” se evaluó mediante el consumo, durante la semana anterior a la entrevista, al menos de uno de los siguientes grupos de alimentos: dulces, refrescos o jugos artificiales. El consumo regular se definió como la frecuencia de consumo durante al menos cinco días a la semana. La asociación entre el resultado y las variables de exposición estudiadas se realizó mediante la prueba de chi-cuadrado de Pearson, con un nivel de significación del 5%. De los 214 empleados entrevistados, un tercio informó haber consumido regularmente alimentos ultraprocesados (33,6%; IC95%: 27,3-40,0). El consumo regular de refrescos y jugos artificiales fue reportado por aproximadamente el 15% de los empleados, mientras que se encontró un porcentaje más alto entre aquellos que consumieron dulces regularmente (22,9%). No se encontró asociación entre el consumo de alimentos ultraprocesados con las variables género, edad, estado civil y educación. Dada la alta prevalencia del consumo regular de alimentos ultraprocessados, se enfatiza la necesidad de desarrollar intervenciones y/o programas de promoción de salud llevados a cabo en el lugar de trabajo y dirigidos a cambios en el comportamiento alimentario.Este trabalho tem como objetivo avaliar o consumo regular de alimentos ultraprocessados por trabalhadores. Trata-se de um estudo transversal realizado com uma amostra representativa dos funcionários da universidade da cidade de Criciúma, Santa Catarina, por meio da aplicação de questionário incluindo informações demográficas, socioeconômicas e comportamentais. A variável desfecho “consumo de alimentos ultraprocessados” foi avaliada através do consumo, referente à semana anterior à entrevista, de pelo menos um dos seguintes grupos alimentares: doces, refrigerantes ou suco artificial. O consumo regular foi definido pela frequência de, no mínimo, cinco dias na semana. A associação entre o desfecho e as variáveis de exposição estudadas foi realizada através do teste Qui-quadrado de Pearson, utilizando nível de significância de 5%. Dos 214 funcionários entrevistados, um terço referiu consumo regular de alimentos ultraprocessados (33,6%; IC95% 27,3-40,0). O consumo regular de refrigerantes e suco artificial foi referido por cerca de 15% dos funcionários, enquanto um maior percentual foi encontrado entre aqueles que consumiam doces regularmente (22,9%). Não foi evidenciada associação entre o consumo de alimentos ultraprocessados e as variáveis sexo, idade, estado civil e escolaridade.
